About this Cook
My favorite things to cook
I LOVE trying new recipes and have found so many great ones on this website. I send out a big thank you to all of you for submitting your favorites so that I have new favorites.
My favorite family cooking traditions
As a little girl, I used to love to watch my mother make holiday meals. She never stressed out over it, and I admired her for that. I couldn't wait to grow up and learn to do what she did. Over the past several years, I have inherited the tradition of making Thanksgiving dinner. It is my absolute favorite meal to cook. There is a real art to correctly timing all of the dishes. Last Thanksgiving, I had a broken left leg and a broken right ankle, so I couldn't host the dinner. I MISSED IT so much!! I almost can't wait until this Thanksgiving to get back to it! My cornbread sausage stuffing is a big hit with my family.
My cooking triumphs
I created my own version of a chicken pot pie. Not being terribly creative, I was extremely proud of that. Because of my lack of creativity, I had to learn to follow a recipe to a "T". With experience now under my belt, I can add or subtract from a recipe to adjust to my own tastes, as well as those I'm cooking for.
My cooking tragedies
I have a bit of trouble with roast beef recipes. Anything cooked in liquid dries out, even if cooked rare to medium.

Cabbage Roll Casserole
I love this recipe. I also throw in a can of tomoatoes with green chilies for a little kick.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce
OMG...this is delicious. I served this dish to my sister and brother-in-law when they were visiting from out of state. They both said it tasted like a restaurant quality dinner. Instead of halibut, I used cod (our favorite white fish). I tweaked the sauce by using more milk (didn't use cream) and green onions and dill. It cut down on the strong lemon taste and worked very well. I will definitely make this again.

Easy Chicken Fajita Soup
I am giving this 4 stars, even though it didn't come out very well. The chicken was extremely dry. That may have been my fault because I used my slow cooker for 6 hours. The taste was good, however. Next time, I am going to follow one reviewer's direction. She used skirt steak. I think that may work much better. AND....I won't use my slow cooker.
