Pineapple Upside Down Cupcakes

Have made this many times before finding the recipe posted. I rated it a 4 because of the changes I usually make for the topping. I melt 1 TBSP butter and 1+ TBSP brown sugar in the muffin tin for the brown sugar / butter instructions. I also don't need the dusting of powdered sugar.

Easy Biscuits

Made these because I was in a pinch. Choose this recipe because -- only 3 ingredients. Did not have milk but did have buttermilk powder so used that in place of milk. Doubled the receipe - and because I was in a rush I just used a large scoop and scooped out 24 bisquits and slightly flattened them. Took advise from others and placed right next to each other. Slightly bland but with butter and jelly they were great.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Very delish. The only change I made was baking for 15 minutes. Family and friends loved these! However not sure how you get 48. I only got 24 cupcakes with a bit of cake left over so I stuck it in a mug and microwaved for 1 1/2 minutes and made a Cup-Cake. LOL!!

Slow Cooker Oatmeal

Family loved it . followed advise from reviews - used smaller crock pot so that it was full. 3:1 ratio (4 cups water, 2 Cups milk & 2 cups oats), sprayed pot and added about 2 TBSP butter, 2 small apples chooped, apple pie spice, cinnamon & brown sugar to pot. Cooked on warm for almost 10 hours. Very creamy.

Lunch Box Hot Hot Dogs

Like another poster stated I heat the thermos then wrap the hotdog in foil and place in heated thermos. I also send egg and cheese burrtios this way. My older kids loved top ramen so during winter I would send the heated soup in the thermos and the noodles in a tupperware bowl. At lunch all the needed to do was pour the hot soup over the noodles, mix a bit and enjoy!

Emma's Belgian Waffles

My family love these waffles! Couple of things I do to make it easier is - mix in the whole eggs at start. I don't seperate the egg from the white. It is perfectly fine without beating the whites. I just use regular flour and then add 2.75 baking powder as an earlier reviewer suggested. Also, the longest I have waited before cooking is about 20 minutes with the least being 10 minutes. Either way the waffles are perfect! My boys love to top with fresh fruit and whip cream!

Favorite Banana Blueberry Quick Bread

Wonderful recipe! My family loved these!! Followed ingredient list pretty much as posted except I used instant blueberry flavored oatmeal (only thing I had on hand) in place of the quick cooking oats. I sprayed muffin tin with pam and sprinkled with a mix of cinnamon and sugar. It added a nice touch. I made 6 XL muffins and cooked for 25 minutes. I think next time I will add 1/4 Cup more blueberries and sprinkle the cinn-sugar mix on top too.

Chocolate Waffles I

My family liked these. The only change I made was I used sweetened cocoa powder - that was all I had on hand. Kept everything else the same. Made them in my begium waffle maker. The first came out soft so I just increaed the time a bit so the outside was a bit crispy but still soft on the inside. Served with sliced strawberries with choice of syrup or powered sugar mixed with sweetened cocoa or cool whip. The kids tried all ways and voted for the cocoa and sugar mix with cool whip. Recipe is a keeper!

Ono! I made it with just chicken thighs cuz that's all I had on hand. I also wrapped the bundle in foil as I don't have ti leaves here in AZ. I did add alittle liguid smoke. Served with steamed rice and mac salad. ONO!

Pumpkin Chocolate Chip Cookies III

I've been looking for and tried many reipces for pumpkin chocolate chip cookie for a year now. I usually spend 5.00/dozen in a local bakery for these. I read all the reviews and decided to make the following changes -- added 2 tsp of pumpkin spice (kept the 2 tsp of cinnamon) and reduced the chocolate chips to 1/2 cup. My family and friends really enjoyed this cake-like cookie. I do think the chocolate chips could be reduced down to 1/4 cup.

Chipotle Chicken

My family loved it...i should have followed the advise of using only half of the chipotle peppers.....the sauce made it extra hot but my kids still loved it! Served with cilantro-lime rice, black beans, mexi-corn, grilled peppers and a salad. Topped with sour cream and avacado.

Guinness® Corned Beef

Pork Chops with Sweet Potato

Very easy and minimal cost. My kids (9 thru 16 yos) enjoyed the meal. Chops were tender and the sweet potato was anjoyable mix. I didn't have mace so I substituted nutmeg.

Classic Tiramisu

I made this for my wine tasting party dessert and it was a big hit. Keeping with the wine theme I made indiviudual serving in wine glasses (12) I placed the lady fingers up against the glass and the filling in the middle. Dusted with cocoa powder and placed a mint leaf on top. Very classy looking! Very one loved it!!
