About this Cook
I'm a wife and mother... 1st generation Latvian -Canadian... I learned to cook the Northern European way from my mother and grandmothers - and I've been doing so for as long as I can remember. I can make a masterpiece from a mushroom (and occasionally a mountain from a molehill! lol) - problem is I'm kind of tired of busting my rump to do new things involving oodles of work - I need to concentrate more on traditional Canadian cuisine customs - quick and tasty. any suggestions email me at: kikiboo43@gmail.com Love y'all!
My favorite things to cook
I like hearty things... northern european comfort food. I grew up with it - and it's really w hat I know best. Like many others I tend to gravitate to what I know and love... Kotletten (hamburger patties) in a rich creamy sauce with lots of onions, mashed potatoes, goulash, thick soups like bean & pea etc. My new love is anything that is other than the genman/latvian/nordic type food - I LOVE Italian pasta dishes (not too hot on the traditional seafood Sicilian types but hey?!) mexican - (adore it) and now I'm dabbling in Indian cuisine.
My favorite family cooking traditions
filled, twice cooked turkey crepes (sauteed chopped left-over turkey with onions and a few choice spices), Piragi (wonderful little buns filled with a smoky bacon & onion mixture), lots more with similar qualities... I can't give away ALL my secrets!

Lemon Cranberry Muffins
Wonderful! I did make some changes though. 3/4 c. milk + 1/4 c. sour cream, 1/4 cup lemon juice, *next time will use juice and rind of a whole lemon*, added 1/2 c each of walnuts, chopped dried apricots, and poppy seeds... ooops.. BUT... NOT poppy seeds as I realized AFTER I sprinkled... omg, they were CARAWAY seeds! I managed to scrape off some, but still had about 1/4 c. in the mix. Turned out perfect... no worries at all. :)))

Penne Pasta Salad
Simply lovely. My 12 and 14 year old daughters love the flavour of peppers but don't actually like to bite on them - so I cut the peppers a bit larger which allowed them to have a portion with less - and us MORE! lol =) I used a combination of half Miracle whip and half sour cream in the basic dressing (I find it lets the flavours come through better.).... I do this with my potato salad also - and added about a tablespoon of pickled pimento chopped very fine. I also used half the dijon. After sitting in the fridge for 24 hours (tip: hide it in the back, bottom shelf - I know my kids and hubby are lazy and prefer not to bend!) the flavour of the peppers has imparted it's wonder into the pasta.. you may have to 'top up' the dressing as it soaks into the pasta. This is when I serve it - and it's GONE in no time flat.! Thanks for the recipe!!!
