This morning was the first time I ever tried my hand at making pancakes, and I really wanted to get it right...it's my hubby's birthday, and this was to be a surprise breakfast. So I went for it, and am glad to say that I passed with flying colours, thanks to Verona's grandma!!! Based on other reviews, I added only 1/2 tsp of salt since I was using salted butter, and also added some vanilla extract. I mixed the wet and dry ingredients separately first, and then mixed them together. then I left the batter for about 40 minutes in the frige. To make it "gourmet" I folded in fresh blueberries. They came out just perfect- fluffy and golden! I served mine with warmed maple syrup (authentically Canadian!) and fresh blueberries...my husband thinks I'm a magician :-)
