Busy Night Turkey Taco Soup with Avocado Cream

This tastes So good and it's really easy. It's essentially like a tortilla soup, so in addition to the guac/sour cream, add some shredded cheese on top and maybe throw in tortilla chips. I subbed a pre-cooked rotisserie chicken for the turkey and used Trader Joe's pre-made guac. Easy and delicious. Thanks for this recipe!

Amazing Butternut Squash

This worked out well... I tweaked it a little, using a LARGE squash, half the onion, less mayo (I did not use hellmans and would definitely try that next time as I am not a big fan of other mayo), added some butter (1-2TBS) to make up for the mayo, and eyeballed the brown sugar (probably added more than called for). Since I put butter in the squash I just left it out of the topping. This was pretty easy and my husband ate about half the pan.

Ultimate Twice Baked Potatoes

I have made these twice now and each time we love them! I sort of eyeball all the measurements. Will continue to make this--my toddler loves them... it's a good way to sneak in other foods (fish, broccoli mashed up, etc). Thanks!

Risotto with Tomato, Corn and Basil

We're big fans of this recipe. It is toddler friendly and the fresh corn, tomato and basil make it sooo good. I used raw corn cut from the cob and added it in to make sure it cooked earlier in the process. Turned out great. It may give you gas though! Thanks!

This is great. Leftovers are good and I even had some to freeze for later. I added corn to the meat mixture. It would be good with any other veggies on hand as well. Thanks for this recipe! Our toddler loved it!

Koula's Best Ever Chicken Gyros

These were pretty good but missing something in the marinade. I even let the ckn marinate for about 4 hrs and still it didn't have much flavor to me. Will be sure to get more sturdy pitas next time. Try it with Greek style yogurt (thicker consistency, like sour cream). Pretty good!

Italian Summer Squash Polenta Bake

We really liked this one. My 16 mo. old loved it. Good use of fresh veggies, and polenta is so versatile. Followed the recipe as is and even enjoyed the leftovers.

Spicy Bean Salsa

not the best I've had, but then again, I'm a Texas girl. I used half the amt of italian dressing and still it seemed too much. Maybe use fresh beans, corn, etc, instead of so much canned?

Spinach, Egg, and Pancetta with Linguine

This pasta is pretty good. I think 16 oz is way too much pasta and would adjust the proportions--either add more spinach, egg, bacon or reduce the pasta. Even as it is, the dish is delicious.

definitely cook longer than 45 minutes! I did an hour and it still wasn't done. This dish was a little better reheated on the skillet, but overall, even with the many improvements suggested by the other reviewers, it's not 4 or even 5 stars.

Tiramisu Layer Cake

This cake was delicious, even though I screwed up! You can't beat a recipe that succeeds even when the cook fails. I used Medaglia d'oro instant espresso coffee I found in Whole Foods for the middle cake layer. The problem was that I read "1/4 cup of instant coffee" instead of 1 tsp. (I was looking at the item below it) and as soon as I mixed the 1/4 cup into the cake layer I knew it was wrong. I tasted the batter and thought for sure I had ruined it, but since I was without a car and without another cake mix, I proceeded to fix the cake completely. It chilled and I served it to my husband for our anniversary. I was very skeptical. But it turned out fantastic. We both loved it. This is the way to go if you want more coffee flavor (next time I will probably use less than 1/4 cup of instant coffee, but definitely double the coffee/kahlua drizzle mixture.) I used the mascarpone cheese, whipped the heavy cream for close to 6 or 7 minutes and got filling and frosting that was not runny at all. Try this recipe. You will love it.
