Baked Salmon Fillets Dijon

The topping was delicious, and this dish is easy to prepare. The only reason I didn't give it 5 stars is because salmon is my favorite fish, and I have other recipes that I feel allow its flavor to shine. My kids loved this though. Thanks!

Carrot Zucchini Casserole

I needed a dairy free casserole, and this fit the bill. I cooked the carrots with a little water in the microwave until nearly done, then added the squash (little more water) and all the seasonings and finished them, with the addition of a bit more herbs since one reviewer indicated that it needed something. I then stirred in the mayo and proceeded as directed. My family loved it, but I thought the mayo flavor was a bit overpowering....would like something more savory. I'll make again and play with the flavors. Thanks for a great starter recipe!

Pan Seared Salmon I

A little too crusty on the outside for me, and I did feel that it was a bit better with some extra seasoning (rosemary and garlic - nearly burned the garlic), but it was a great starting recipe. I kept the heat on medium high, and removed the thinner portion at the recommended time. I then covered the thicker piece and cooked an extra minute. Delicious - thanks!

Baked Sweet Potato Sticks

A big hit with everyone in the house, and that's saying something. My teen would have preferred them fried, but they are so much healthier this way that I wouldn't change a thing. I used two BIG potatoes and cut them in sixths or smaller. I left one unpeeled and used paprika, adding garlic salt and rosemary per others' suggestions. The other potato I peeled (then had to use quickly, as it seemed to want to turn brown), and used brown sugar and a little garlic salt. Some of my family preferred them this way, although I liked the savory ones better. Microwaving them about 3 minutes before slicing made them easier to slice but a bit messy in a couple of places due to being too soft to handle well...will probably skip this next time. Thanks for the great recipe!

Super Simple Salmon

Have to echo the others...5 stars for easy, elegant, and delicious! My salmon was a thick center cut, so I had to turn down the heat and cook a little longer for doneness. I used sea salt, and a bit less based on recommendations. Also used half olive oil and half butter. I started serving from the thinner side while the thicker side finished, and I had a hard time not wolfing mine down right at the stove. Thanks so much!

Spaghetti Sauce III

My husband isn't Italian, but he always liked it when I made spaghetti with his mom's homemade sauce....until I lost her recipe. He pronounced this version very good. High praise indeed. It's by far the simplest recipe I've found that we like. The only thing I changed was to cut up the stewed tomatoes with kitchen shears...oh, and was out of dried basil so I used fresh from the garden. If you like your sauce meaty, as my hubby does, no other changes are recommended. I personally might add a bit more tomato paste. Thanks for submitting!

Blueberry and Raspberry Pancake Topping

Love how easy this is; it was a nice (healthier) change from syrup for my French toast! Fresh blueberries were all the fruit I had, and I did think it was better with the addition of a little lemon juice - likely not necessary if raspberries are included - as well as some almond extract and cinnamon. Thanks for the recipe!

Slow-Cooker Corned Beef and Cabbage

Made this exactly as written, except for slicing the carrots into fairly thin coins. I didn't have 8 hours to cook it, so I cooked it for 6 hours with a combination of high and low heats, mostly high. Everyone enjoyed it and the veggies were a perfect texture. I wish that I had made the creamy horseradish sauce recommended here by others; I think it would have been great. Thanks for the recipe!

This was easy and flavorful. I felt that the balsamic vinegar was a bit strong, next time would reduce the amount slightly and/or add a little brown sugar. However, it was moist and yummy - thanks!!

Easier Chicken Marsala

Hubby loves this one. Don't overcook! Edited to add: I've made this recipe a dozen times now, and it's my go-to quick dinner. Throw rice in the cooker (or pasta in a pot), start the chicken, and both are done by the time I make the salad and heat the other sides. I typically don't change anything, but if I want extra sauce I increase the wine, with or without some chicken broth. Reliable and quick - what's not to love? Thanks!!

Semi-Homemade Stuffing

I assume this would have been 5 stars if I had followed the recipe exactly! My kids did the shopping for me and got the Stove Top stuffing mix, and I just went with it. Liking softer stuffing, I used about 48 ounces of chicken broth, and it seemed too soft so I left it in the oven at least 20 extra minutes and it ended up with a pretty good texture but a slightly burned flavor. Will try again with the bagged stuffing mix and I'll bet it will be great.

Easy Spaghetti with Tomato Sauce

Really easy and a nice flavor. Our family consensus was that it needed the addition of a bit of tomato sauce (even my husband, who likes his spaghetti sauce to be meaty "like chili"). I could double or triple this and have freezer meals at hand. Thanks!

Basic Crepes

I gave this recipe 5 stars because I think it would be great as written; I was looking for a recipe I could modify to be non-dairy and this was pretty good. I used Almond milk, Smart Balance butter, and added almost 1/4 cup sugar (to our taste). These were fairly easy to handle, although didn't flip too easily, and the taste/texture were ok with our toppings. Maybe less melted butter next time, since I needed plenty in the skillet to prevent sticking. Thanks!

Summertime Tilapia

Delish and moist tilapia! Couldn't find a shallot, so used onion, and used a tiny bit of cooking wine since I had no tequila, but kept everything else the same. A forgiving recipe and I think it would be good on other fish and maybe poultry? Thanks!

Marie's Easy Slow Cooker Pot Roast

This is an easy and customizing-friendly recipe. I give it 4 and 1/2 as written, and 5 with the addition of a seasoning rub on the roast before browning, and beef broth instead of water. Sodium count admittedly goes up quite a bit with this version. Thanks for a yummy family dinner!

Balsamic Chicken

I love it for the ease and the handy ingredients. I've used it with breasts and cutlets (with modified cooking times) and it turns out flavorful. I boil the marinade and pour it on the chicken and the rice or potatoes. It was just a bit too sweet to be a favorite for some family members, but when I cook it on a weeknight it gets devoured! Thanks!

Quinoa and Black Bean Chili

This was much better than the only other vegetarian chili recipe I've tried. I think the chipotle pepper added depth and warmth. I left out the jalapeno to suit my family's taste. I also had to leave out the red and green peppers, since my hubby can't eat them, so I should have added something else...Mexican chili powder maybe? I also think an 8-oz. can of tomato sauce and a can of sliced carrots would be great, but that's a matter of taste. Despite the quibbles, I'm giving it 5 stars for introducing me to my favorite new product: quinoa! Thanks for the recipe!
