I've been coming to this website for recipes since 2001 (I don't know why I waited so long to become a member), but I've yet to find a bad recipe here! I love the fact the recipes are easy and use ingredients that are not hard to find.

One thing I'd love to fix but can never get right is Chile Rellenos. My favorite Mexican dish, and for some reason, I always manage to mess them up.

Swiss Chicken Casserole II
I had to try this as soon as I saw this recipe! I've been making a similar dish for years (with cheddar cheese, broccoli cheese soup, and croutons). This was a wonderful change! I used cream of mushroom soup, and sliced some fresh mushrooms to put in the stuffing, all ingredients I had laying around, and I added a little water to the stuffing and let it sit before putting it on top of the chicken. And like other reviewers, added some salt, pepper, garlic powder, and parsley. This is a great dish, and will be making this again! Next time, I'll make double!

Middle Eastern Kibbeh
This is a great recipe! I subbed toasted pine nuts for the mint, and baked them in the oven, served it on pita bread with mayo, mustard, lettuce, and tomato. It tastes just like it came from a favorite local lunch spot! YUM!

Sean's Falafel and Cucumber Sauce
This recipe is great! I followed it to the letter, except I changed the baking powder for soda as another reviewer recommended, and I doubled the cucumber sauce. Served it with Tabbouleh III and Real Hummus from this site, along with pita chips. I was worried my "Meat and Potatoes" husband would turn his nose up, but he loved it as well! Next time I might throw the chickpeas in the food processor for a light chop, (I had my son taking turns with me to get them smashed up). I can't wait to make this again! Thanks Sean!
