Simple Beef Pot Roast
I've made this a few times, using both chuck roast and English roast. Both turned out great! I did end up doubling the carrots, celery and onions. Only because I needed them to make a shepards pie with the leftovers. I paired this with horseradish mashed potatoes, which Chef John suggested. It was awesome, and added alittle zip to my shepards pie! This is a family favorite!

Mediterranean Quinoa Salad
I made this recipe exactly as written! My whole family (of men) loved it. I made it as a side dish, but decided that it was better served as a meal. So we wrap this up in flatbread and eat it like that. I've never made anything with Quinoa before, so it was great find! A keeper!

Asparagus with Sliced Almonds and Parmesan Cheese
This has been a favortie in our house for many years. I've given this one to many of my friends. It's fast, easy and so flavorful. Great addition to steaks, chicken, even burgers! Enjoy!
