Spicy Garlic Lime Chicken

The spice mix is great for seasoning poultry. I skipped the butter though. I just added 1/4 to 1/2 cup water to deglaze the pan, then let the water boil down until a sticky sauce forms. Great flavor. I use cold leftovers for salads.

Flavorful Beef Stir-Fry

Good Recipe. Made with London Broil/Round steak. Sliced meat super thin while frozen. Used 1/3 less soy sauce. Used chinese cooking wine for the liquid. Marinated overnight.

Blueberry Waffles with Fast Blueberry Sauce

These are pretty good. Add 1 tsp. vanilla. Also add 1 tsp. cinnamon if not using blueberries. Make sure not to overdo the orange juice in the sauce. Do not add zest.

Pretty good. David liked it. I added sauted mushrooms, onions, and garlic. It made a huge amount. Use a really big baking dish or two smaller ones.

Spicy Basil Chicken

Prepared with red pepper flakes (1 tsp) and thai chilli sauce w/ garlic (2 tsp) instead of chili oil and whole peppers. 1/2 tsp sugar and 2 tbsp oyster sauce. No garlic salt (heard it would be too salty). substituted some mushrooms and red bell peppers for onion (had none). Nice flavor. Next time, make more saucy. perfect degree of spiciness. boyfriend was alarmed that I used up half his basil plant for this one meal.

Salisbury Steak

This was a delicious recipe. I love salisbury steak and had been craving it for several weeks when I found this recipe. My boyfriend thought it was a silly thing to like b/c it reminded him of cafeteria food. We ate this with mashed potatoes, green beans, and carrots. He decided it is a keeper! I did make a few modifications: cream of mushroom soup instead of french onion soup, the bread crumbs were seasoned with onion soup mix, adding 1/2 cp water and 1/2 cp milk to make extra gravy, extra onion flakes sprinkled into the meat and the gravy, 1 additional Tbsp worcestershire sauce, and no ketchup (didn't have it). The gravy was fine without the ketchup. I think it would have made the gravy too sweet/tangy.

Classic Spanish Sangria

This made a great drink for my boyfriend's birthday party. All the guests went for seconds and thirds. One guest mentioned it was better than his own version. I eventually ran out - way too early. For my version, I used a cheap burgundy, only 1/2 cup medium rum, no lime nor lemon (didn't have on hand), added diced apples, halved grapes, orange slices, 1/2 cup splenda (instead of sugar), and used iced cubes made with gingerale to prevent watering down the drink.

Mock Lemon Chiffon Cake

Made a delicious birthday cake for my boyfriend. Used light mayo substitute, all sugar-free vanilla puddings, lite whipped topping, and fresh strawberries. Turned out great. Guests wanted seconds.
