I am a loving wife and mother and mom of 3 beautiful children ages 10, 18, & 21. I have been on a journey since May 2007 to shed a lot of unwanted pounds and as of 11/07 I am nearly 40 pounds lighter. I love to eat, LOL! But I had to learn to eat healthier most of the time so that I could keep my good health and be around for my grandchildren...when I get some, LOL! I love to decorate and I love to travel.
My favorite things to cook
Tasty, healthy meals. I'm still learning how to do this and that's why I'm here today, (11/12/07), to hunt down some low fat soul food classics for this much healthier Thanksgiving!
My favorite family cooking traditions
Watching my grandmother mush her homemade dressing in her fingers, then sticking out one of the fingers covered with lots of dressing, saying, "Taste I need more sage." Priceless!
My cooking triumphs
Fortunately, cooking is in my genes so just about everything I make taste great. I am very good at making my pound cake. It's always a hit whereever I take it even just in my kitchen. I usually eat more of it than anyone. Thing is, I am not making it this year but I'm eager to find a new lower fat version for the holidays.
My cooking tragedies
Once I made a black bean chili that everyone hated. Since they didn't like it, I never even tried it. Many years ago and haven't ventured in that territory again, LOL!!!

Country Apple Dumplings
I made mine with 1/2c Splenda blended sugar, 1/3c Brown sugar, & Smart balance butter. I'm sure if you follow the recipe to the tee...they would be SINFULLY delicious! Thanks for posting the recipe. I'll definitely be making this again and again. Super simple!

No Bake Chocolate Oatmeal Cookies
I love these darn cookies! The perfect, easy to prepare, easy to devour snack! Per another reviewer's suggestion, I used coconut oil since I had some on hand. Everything else I did just as directed except I sprinkled my cinnamon in the mixture according to my own taste. I was a little skeptical until I tasted the batter. I would have licked the pot, had it not been hot, LOL! However, I did scrap, scrap, scrap the pot with my wooden spoon, and Yum...was it GOOD! I'm so amazed at how they solidify in the fridge. We'll be one of my weekly recipes for a good wholesome snack.

Vegan Bean Taco Filling
I don't know why this rates so high because it just taste okay for mashed beans. There wasn't anything special about them at all. I would make them again but with vegetarian/vegan refried beans (no need to mash them myself again), salsa and a pinch of sea salt so they're not bland. They would taste better, IMO, on the side with some Spanish rice and veggie crumble tacos for a more authentic tasting Mexican meal. These beans would serve much better on burritos than tacos.
