Super Easy Slow Cooker Chicken

Reviewed: Jan. 4, 2013
took others advice...i added onion soup mix to the condensed soup. i had to add my own seasoning b/c i didn't have herb and chicken soup. sprinkled garlic powder, pepper, and a little poultry seasoning over chicken. i omitted the wine. we served with mashed potatoes.

Pumpkin Black Bean Soup

Reviewed: Oct. 29, 2012
i was a bit concerned about this soup... but i shouldn't have been! It was delicious. I sauted the ham with the onion and garlic. it really brought out the ham flavor. I didn't blend the tomatoes and beans as directed...instead i used a potato masher while it was cooking and mashed it up a bit. i also added cumin and cayenne pepper. It was super easy and very good.

Turkey-Stuffed Peppers

Reviewed: May 2, 2012
Yummy! I did add some additional seasoning...these seasonings were added to a double recipe (1/4t black pepper, 1/4t salt, 1/2t poultry seasoning, 1C rice, and 1 egg). I also didn't make the sauce, instead I added 1C cheddar cheese to 2 packets of turkey gravy mix and the approp. amount of water.

Samhain Pumpkin Bread

Reviewed: Oct. 29, 2011
Perfect! I made this at the last minute for a Halloween party. In hopes of cutting down on cooking time and making it easier to serve, i baked in a 9X13 pan. They came out like pumpkin brownies. No major changes...omitted clove, used baking powder instead of soda, flour was half wheat half regular, sugar was half brown half regular. It was gobbled up!

Slow Cooker Lime Chicken with Rice

Reviewed: Mar. 25, 2011
cooking time is way off...at least for my slow cooker. 5hrs on low for fresh chicken breast made them dry dry dry! I added 1 cup regular brown rice with 2 hrs left. The rice turned out perfect. I did add 1/8tsp of red pepper...just enough for some flavor but nothing the kids noticed. Overall great recipe!

Orange Beef-Style Tofu Stir-Fry

Reviewed: Mar. 10, 2011
The sauce was delicious! This was my first attempt at eating and cooking tofu. It wasn't too bad. My carnivore husband seemed to like it more than I did. I made it as is except I used chili and garlic sauce b/c I didn't have paste. Plus, I added tons of veges (green beans, carrots, mushrooms, and broccoli) and doubled the sauce. I will make again and will probably use the sauce with pork or chicken stir-fry.

Cold Rice Salad

Reviewed: Sep. 9, 2010
i really simplified this recipe b/c i was making it while camping. It's so easy and versatile. i omitted the chicken and egg, but added chopped carrots. i used brown rice (cooked according to the package) and used a low-cal italian dressing instead of the oil/vinegar. it was really tasty and i received many compliments.

Lasagna Roll Ups

Reviewed: Mar. 28, 2010
WOW!!! Is all i can say. i made a low-cal version and got tons of compliments from a crowd of 10 people. I did use my own sauce instead of jar. i used firm lite tofu, cottage cheese instead of ricotta and cut all the other cheese in half. i also used whole wheat noodles. With my modifications these rolls were 3 pts each with weight watchers. that was using 1/8 c of cheese and about 1/8+ cup of sauce per noodle. It made 24 rolls. i will be making these again and again!!!!!!! Thx!
