Pineapple Chicken Tenders

Love this! I added 1/2t of ginger to the marinade. I only used 1.5lbs of fresh chicken breast, and there was a TON of marinade. Next time I will reserve half of the marinade to use as a sauce for the rice. (I don't like to reuse marinade, even if it's heated to boiling.)

Apple Pie by Grandma Ople

I added 1t of cinnamon, 1t nutmeg, and 1T vanilla to the mix. I used 6 apples, and mixed the melted liquid with the apples before pouring in pie. I saved just a bit to brush over the lattice top. I also brushed the bottom of the pie crust with egg whites before filling it - and it wasn't soggy at all. This was a good apple pie - I didn't experience the "knock your socks off" effect that others speak of, but this will definitely be my go-to recipe for apple pie.

Pork Chops with Sour Cream and Mushroom Sauce

I had four (5oz) boneless pork chops, so I halved the sauce amount. We still had MORE than enough sauce. I served it over white rice. My changes: I browned the chops in butter, minced garlic, and 1/4t each oregano and garlic salt. I then removed the pork chops and cooked them in my foreman grill for a bit longer. While the chops were cooking there, I sauteed fresh mushrooms in the pan on the stove. When the chops were done, I added them to the fresh mushrooms and added on can of mush. soup, and 1 cup sour cream. I brought it to a boil, and then let it simmer for about 30 minutes. Good Dinner - will make again.

Broccoli with Garlic Butter and Cashews

Awesome. My husband told me this reminds him of the vegetables at Panda Express. That wasn't my goal when making the dish, but still very delicious nonetheless. Instead of butter, I used a vegetable oil spread with natural yogurt (Country Crock). It cut down on the amount of fat, but still tasted great. This recipe would be great on any type of steamed stir-fry vegetable.

Taco Pasta Salad

This recipe reminds me of the taco salad we get from the deli--which is what I was looking for. Makes a huge amount! (I didn't realize it until everything was mixed together.) I didn't use green pepper since I don't associate that with tacos, but I did add a can of sliced black olives. I used catalina dressing--when mixed together, the catalina taste is certainly not overwhelming. (I can't imagine it with ranch??) This recipe is a keeper!

Honey Baked Chicken II

So easy! And for us, something different! I used about 1lb of chicken breast halves instead of a whole chicken. I also upped the curry to 1.5teaspoons. Like other reviewers said, I added sauteed onions to the top of the chicken in the pan. The first time I made this I baked it for 75 minutes as the recipe calls for, but the chx came out dry and overdone. I reduced cooking time and covered dish with foil the second time, and it was great! Served it over white rice.

Chocolate Chocolate Chip Cookies I

These cookies were very good--came out soft and chewy. I used half brown sugar, half white, only because I couldn't imagine a chocolate chip cookie without brown sugar! I dropped each cookie by a teaspoon into a "chunky ball" and cooked them for exactly 8 minutes, every batch. They don't spread much--which makes them thicker and very tasty!

White Chocolate Chip Oatmeal Cookies

Had some white chocolate chips and wanted to do something with them before I ate the whole bag alone, haha. A nice twist on the standard cookie. Followed recipe, but omited the nuts. I must've made my cookies a little larger than the recipe suggested, because I only got about 55 cookies. Cooked them about 13 minutes, but they still didn't look golden when I took them out. However, once cooled, they were very chewy and I'm glad I removed the cookies when I did!

Angel Food Cake III

Great! Easy! I didn't have any cake flower on hand, so I just used one cup flower minus 2T, and sifted. Worked like a charm! I cooked it for closer to 40 minutes, at 30 minutes it was hardly golden. Oh, and I broke one of my egg yolks, so I ended up using only 11 egg whites. Still fine! We just at the cake plain...no topping really needed!

Sweet 'n Sour Glazed Chicken

This is a very simple, delicious recipe. I used chopped chicken, and browned it along with two green peppers. I'm not a huge fan of a vinegar taste, so I only used one Tb if cider vinegar instead of two. When I sprinkled on the ginger, I was sure not to let it directly hit any of the pineapple, otherwise there was too strong of a ginger taste. Served it over white rice--quick, easy, and tasty!
