Flourless Chocolate Cake II

This was really simple to prepare and looked fantastic with a few raspberries and powdered sugar on top. So fantastic, in fact, that it was being sold for 4 times the price of the other desserts at my daughters' school event that I took it to. A winner! I also increased serving size to 12 and put it in my springform with greased and cocoaed parchment on the bottom.

Mom's Zucchini Bread

I subbed 1 cup whole wheat flour and used applesauce instead of oil (oops, I forgot I had no oil). I used previously frozen shredded zucchini, and after thawing it seemed to have lost some of its volume and body - so I added a few shredded carrots (never even knew they were in there). I used one cup white, one cup brown sugars. Nuts in one loaf, fresh blueberries in the other. A hit! Especially with the fresh blueberries added in - yum! This seems like a good base to toy with, I'm thinking of adding fresh peaches and tweaking the spices next time. I also love the idea of the previous poster to NOT peel the zukes! Save time, add a little extra fiber - why not?

Bacon Quiche Tarts

I used the chive cream cheese as someone suggested. The filling was very tasty and everyone liked it (omitted the green peppers because I knew some wouldn't like it). I used the Pillsbury dough that's like crescents, but comes in one sheet. Although we usually like the Pillsbury dough, none of us liked it in this recipe. Maybe it's because I made them the day before or something, I don't know, but it was sort of soggy and seemed a little too sweet or something. I wonder if they would come out ok without any crust at all? Maybe I'll try that next. Nice flavor in the filling though!

Peach Muffins

These were fine, not fantastic but not bad. I used fresh peaches and some blueberries, too - they were the real pops of yumminess! I substituted plain greek yogurt because I had it on hand. I might try these again, but I'll probably look for something with a little more flavorful batter.

Cranberry Swirl Coffee Cake

This tasted great + got compliments from everyone who gobbled it up! The one problem I encoutered was that when I went to turn it out of the pan after 10 minutes, only 1/2 came out. It split right across the cranberry layer. Hmm. Maybe I should not have the cranberry go all the way to the edges?

Apple Strudel Muffins

I followed some advice from others : went 1/2 + 1/2 with brown sugar, added 1 tsp. cinnamon + 1 tsp. nutmeg, changed to 1/4 cup butter + 1/4 cup applesauce (which worked out quite well). I shredded 1 apple, and chopped 2 grannysmiths. Added a little oats to the topping. I did 1/2 batter, 1/2 topping, then repeated, but it was more of a pain, so next time I think I'll do it without that step. With these minor changes these were quite tasty and nice and moist!

Fudgy Chocolate Chip Muffins

These were quite tasty! I followed some other reviewer's advice : added 1/2 tsp. baking powder, changed to 1/3 cup cocoa (I used the "Special Dark"), added 3/4 tsp. salt, and cut the white sugar a little. I also took a pass on the cinnamon. The wonderful crisp top was lost overnight which is a little bit of a bummer, but the taste doesn't fade. If I can I will always try to bake + serve them on the same day to preserve the crispy top which sends them into totally awesome territory.

Bacon N Egg Pizza

I made this for my sister's picky family. They all LOVED it, even asked for the recipe + commented on how good it was several times later in the day! I found Pillsbury "flat sheet" dough which made it even easier. Used a little less bacon as 12 pieces seemed like a huge amount. Like others, I had to add at least 2 extra eggs (+ milk) to barely cover the surface. I assembled everything but the eggs the day before which allowed the quick breakfast I needed that day. Thanks for this breakfast hit!

Spooky Halloween Eyeballs

This recipe was perfect for my big pumpkin carving party at work! Yes, they were hard to make. Forming the balls was a little easier if I kept 1/2 the mix in the freezer and swapped when the mix I had out got too gloppy. I kept the trays of balls in the freezer once formed. Used a toothpick for dipping in the white choclate, eventually covering that hole with the "iris". I did them over a few evenings. They came out adorable! And WOW - the complements on how yummy they were! It was totally worth the effort.

African Chicken Stew

I took others' advice and added a can of chicken broth and only 1/2 cup peanut butter. It still came out too dry and really peanutty. And although I cut the pepper flakes way back, I still thought the flavor was very good. Next time I will add more liquid and perhaps just some regular peanut butter (which do not seem so overwhelmingly peanutty). I did add carrots and parsnips too, which I think is a nice addition. I think it tastes pretty good and hope to refine it to our tastes next time.

Easy Batter Fruit Cobbler

This certainly was super easy! The flavor was fine - really let the blueberries shine, the texture was a bit spongy. I will try another recipe, but will keep this for a really fast prep.

Fresh Strawberry-Oatmeal Cookies

I thought it would be fun and tasty to make cookies with fresh strawberries. Took them to a BBQ at the bosses house. Wow, how embarrassing. I'm known amongst friends for being good at baking. I should not have brought these mushy cookies, the strawberries themselves tasted good, but the rest of the cookie was such an unpleasant texture. Very, very disappointing.

Cauliflower with Dijon Sauce

Yum! This was SO esay and very tasty. I followed the advice of others and broiled in the last step. I also had to substitute a "Mexican blend" of shredded cheese, as that's all I had. No matter - still really tasty.

Lemon Blueberry Bread

I used a pint of blueberries and used a lemon and powdered sugar glaze. The bread broke a bit when I removed it from the pan, but it sure did taste good! Very moist, and I love moist! It is however a little bit too dense I think, makes it kind of heavy. I think I may try combining this with a lighter-textured recipe, to try to get the moistness and flavor of this recipe with the lighter feel of a cake, and maybe do it in a bundt.

Red, White and Blue Slaw Salad

I made this to take along to a 4th of July party. Unfortunately the only kind of cole slaw dressing I could find in our grocery stores were the sweet tasting vinegar-based dressings. I didn't have time to look up a nice creamy cole slaw dressing and go out and buy the ingredients, so I just used the premade stuff. Yuch, yuch, yuch! Maybe this recipe would be good if there was a good premade dressing to be had, but I do not like the vinegar-based cole slaw.
