Apple Strudel Muffins
I followed some advice from others : went 1/2 + 1/2 with brown sugar, added 1 tsp. cinnamon + 1 tsp. nutmeg, changed to 1/4 cup butter + 1/4 cup applesauce (which worked out quite well). I shredded 1 apple, and chopped 2 grannysmiths. Added a little oats to the topping. I did 1/2 batter, 1/2 topping, then repeated, but it was more of a pain, so next time I think I'll do it without that step.
With these minor changes these were quite tasty and nice and moist!
