Cream of Celery Soup

Just whipped this up and taking a mug to bed for a nap (had our first snow today to time to hibernate). First of all, for those who might think to skip this step, putting it through the sieve is a must as the celery is very stringy and you want that out of the soup. I pressed as much liquid and flavour out as possible, even ran it through a mixer to get as much goodness out as I could. Ndefinately worth the step as you now have a velvety smooth soup. Topped it with some grated garlic sea salt and it's OH SO YUMMY!!

Seared Scallops with Jalapeno Vinaigrette

This was super easy and a really nice fresh flavor. Can see where you can easily spice things up if you'd prefer with jalapeƱos and or cayenne. But was perfect just as the recipe states. Poured sauce over rice and served with broccoli. Will DEFINITELY be making this again!

Kicked Up Mac and Cheese

Was a good recipe, but as noted needed a bit more sauce. I reserved a bit of the pasta water and used that. The topping was great with the chili powder! I'll make it again.

Butternut Squash Soup II

I've made this soup twice already and am gonna make more this weekend. So very yummy and has simple, on hand, ingredients. I actually had a bag of "spaghetti sauce veggies" and used those (SUPER easy and fast). I also added the curry powder, cinnamon and nutmeg. The curry powder is a must and lots of pepper! My next batch I ran out of the spice so I used cinnamon and maple syrup. Also very good. I'm gonna keep this recipe close for those cold fall/winter Canadian days.

Juicy Roasted Chicken

Ok, so I read the other reviews and thought "sounds too simple to be THAT good", but I was curious and had a craving for roast chicken so gave it a try. OMIGOD is all I can say, well that, and that I can't wait to make it again and have more than myself try it. The other reader who said they nibbled on the celery afterwards is not alone!! I didn't have onion powder, so used onion salt and therefore a little less than the called for amount of regular salt. This is my definate roast chicken recipe .. THANK YOU!

Fabulous Foolproof Lasagna

Agree with others, needs WAY more sauce. It was really easy and could have been yummy but ended up too dry even when I put more sauce than called for. But worth a second shot for sure.

Orange Curried Chicken

Sorry, I had hoped this would be a simple keeper. Maybe I should have stuck with the exact recipe. I added peppers and some mango chutney. Turned out more like a sweet 'n sour chicken than a curried chicken. It was ok, but not what I was hoping for as I really wanted and easy and yummy curry dish.

Szechwan Shrimp

Made this for supper last night, intended to make enough for leftovers this week .. no such luck, it was too good, not a drop left. Nice that all the ingredients are in the house. Super fast and easy, and yet VERY yummy. Have already planned to make it again!

Salsa Chicken

I had chicken breast with backs on, so used those. I used Monterey Jack cheese, and it was amazing. Tried to stop at only one, but no way. Going to make it again tomorrow, WAY easy and so very good!

Chuck's Favorite Mac and Cheese

Super easy, but agree it was a bit dry. I added a can of diced tomatoes, and would cut back on the topping a bit. But served it for a girls-nite and we all loved it .. a real "homie" meal!! Will definately make regularly.

Rhubarb Strawberry Crunch

Made this for my neighbors b'day party last night. Everybody LOVED it, was gone with people having seconds before everybody had firsts!! Everybody asked for the recipe, I don't want to tell them how easy it was! Will make another one today, just for us!

Debdoozie's Blue Ribbon Chili

Made this for a surprise b'day party for my boyfriend. Had to really bump up the qty as it was to serve 30+, but was SO easy and everybody was raving about the chili! Still eating it 3 days later and just as good!
