Red Garlic Mashed Potatoes

I thought these potatoes were very good! As noted by others, I did not add the sugar (seems unnatural and unnecessary!) I did add 4 cloves of garlic into the pot while cooking the potatoes. I topped off the serving dish with fresh parsley and the potatoes tasted and looked wonderful!

Slow-Cooker Chicken Tortilla Soup

Very good soup! I did not use a slow cooker due to time constraints, but I doubt that would change the outcome of this recipe. I'd have to agree with others that this is restaurant quality.

Key Lime Cheesecake I

We all loved it! I couldn't squeeze out quite enough key lime juice, so I used a little bit of lemon juice. I will make this again. Great for a summertime dessert.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Oh, yeah! This was really good!!! The glaze is fantastic! I served this with white rice and grilled red peppers, mushrooms and red onion...a good accompaniment. We poured some of the glaze over our rice. That was tasty! I'm now moving this recipe over into my "serve to company" folder!

Brie en Croute

Step #3 will clarify your confusion. This is baked in the oven for 20 minutes - then you let it stand for 1 hour before serving. That adds up to 1 Hr. & 20 min. before it would be ready to be served.

Butternut and Apple Harvest Soup

It is good, but lacked a layer of flavor for us. I did as some reviewers said, and used a sweet potato and added cayenne. It did have a kick from the cayenne but was still just a bit "flat".

Smoky Mountain Chipotle Chicken

Everyone really liked this recipe! We like spicy foods so we used about half the can of chipotle in adobo sauce. Topped with a slice of bacon and a slice of provolone.

Chipotle Chicken

This is really a 4 1/2 star recipe! I added a bit more sour cream to the chipotle's, and ran it through the food processor briefly. I also added a handful of frozen corn. My son, who does NOT like chicken says this is one of the top 5 chicken recipes in his opinion!

Bruschetta II

Wow...this was very good! 1st attempt at Bruschetta (and pesto, too) and this impressed our dinner guests. The pesto was very "thick", though, and didn't want to blend in either the food processor or the blender. I'll try decreasing the almonds even more next time to get a better consistency.
