Chef John's Pasta Primavera

Excellent. Made for St. Paddy's day dinner. All enjoyed. No need to blanch the basil because it gets blended into sauce. Use a strong, sharp cheese.

Mom's Brussels Sprouts

We have never been brussel sprout fans, but this recipe rocks. The 12 and 10 year olds, and husband all enjoyed this. The only objection came from my son who didn't care for the walnuts. Very slight changes: I sauteed halved sprouts in an olive oil/butter combo to lightly brown some sides, then steamed for 5-6 minutes. Made sauce w/ slightly less sugar than suggested. Excellent.

Grilled Marinated Swordfish

Outstanding flavors. Swordfish ended up juicy. Kids and husband loved it, as did daughter's 12 y.o. friend who doesn't like fish, but tried it and asked for more. Didn't change a thing in the recipe.

Greek Couscous

My family enjoyed this. I made a few changes to appeal to the 12 and 10 year olds: skipped the olives, but added some finely diced red pepper which gave it a nice crunch. Also, I didn't have garbanzo beans, and used black beans instead. Overall, a nice, healthy side dish.

Turkey and Quinoa Meatloaf

Baked Dijon Salmon

Parmesan Brussels Sprouts

Simple and excellent. I made a very minor change to shift to a healthier fat content: I melted 1/2 TBL butter and 1 TBL olive oil to saute the garlic and then added the brussel sprouts with 1/2 TBL additional butter. Half way through the cooking, added another 1/2 TBL butter. This was plenty of butter/oil for 1 lb of brussel sprouts, and my family loved it. Thanks for a great recipe!

Black Bean and Salsa Soup

Extremely easy to make, plus it's delicious. Used an immersion blender right in the sauce pan. Followed other suggestions and kept out 1/2 c beans. Also, added some dry cilantro and 1/2 tsp. lime juice. Will need to make again soon!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

A huge hit with the family. Used grape tomatoes and extra garbanzo beans. Didn't have scallions or shallot, so used leeks instead. Can't wait to make again.

Pork Tenderloin with Steamed Kale

My husband, 8 y.o. and 6 y.o. loved this recipe, and asked for seconds. I too drizzled a small amount of the dressing on the sliced pork and kale, and reserved the rest for later. Also, I added some roasted shallots to the finished dish of kale. Excellent.

Chicken Parmesan

Absolutely excellent. Made as written with my homemade tomato sauce and dried basil. Served it over linguine with tossed salad. Will you could 'spice it up' for more adult tastes, we thought it was perfectly seasoned for a comfort food.

Broiled Tilapia Parmesan

The family (husband and two kids, 11 and 13) loved it. Some minor changes per other reviewers gave the recipe some real flavor without too much spice: cut the lemon juice in half, added 1/4 tsp. garlic powder, 1/4 tsp. paprika, and a dash of cayenne. Sprinkled panko crumbs on top which toasted nicely and gave a bit of crunch. Thank you!

Dilled Sole with Almonds

Easy, light, and tasty. Accidentally put dill in with cornmeal. Worked out just fine. Dipped flounder in egg wash before coating in cornmeal. Family loved it. Thanks for sharing.

Lamb Chops with Balsamic Reduction

Prepared exactly as written. Could have reduced further than the 10 minutes I gave it, but still wonderful. Use a top shelf balsamic vinegar. Served with spanakopita and greek salad. Excellent. Dinner party worthy.

Tzatziki

Wow. Have never made Tzatziki before and was a bit hesitant about trying it for the first time for guests. There was no need to worry - it was excellent. I used a Greek yogurt and drained for just 2 hours. And, substituted 2 regular cucumbers for the English, and squeezed liquid out as suggested by other reviewers. Cut back on garlic and used lemon juice v the white vinegar, also as recommended. It went very well with the Marinated Greek Chicken kabobs and Greek Salad I on this site. Thanks much!

Salmon and Spinach Fettuccine

The entire family (10 and 12 y.o.) loved this. Small changes: melt butter, then stir in flour to make roux. Then, blend in milk w/ maybe 2-3TBL white wine. Bring to light boil to burn off alcohol. Assembly: add cooked or smoked salmon, capers, and tomato to drained fettucini. Add fresh spinach to cream sauce, place lid on and allow to cook for 2 -3 minutes or until spinach lightly wilts. Serve sauce over pasta mixture and serve. Excellent.

Chicken and Shrimp Jambalaya

We served this meal at a dinner party and it was a hit! A couple changes: I was out of long-grain white rice, and used a box of Zatarain's red beans & rice, but kept water quantity the same. Also used most of a large bag of Pictsweet's frozen pepper and onion mix (it saved on chopping). Lastly, we splurged and used 1.5 lbs. shrimp. Will definitely make again.
