Vegan Agave Cornbread Muffins

These have a much subtler corn flavor than regular corn muffins. That said, they were delicious! I used skim milk and about half the amount of agave syrup. There was only enough batter for 4 regular sized muffins, so I recommend doubling the recipe.

Caramelized Butternut Squash Soup

I liked this soup much more than variations which call for roasting the squash. I cut down the fat by omitting the butter and using light instead of heavy cream. I used an immersion blender which is quickly becoming my favorite kitchen tool!

Mexican Chicken Soup

This is a very easy soup to make and soooo good. I followed one reviewer's advice and went easy on the ground cumin. I used all chicken broth (no water) and added corn and small pasta tubes. This is going into my regular Sunday soup rotation.

Pistachio Crusted Chicken

This was outstanding! The only change I made was to put the pistachios in the food processor so that they'd stick to the chicken better. I have not found a really good recipe for chicken in awhile, but now this is it!

Lamb Tagine

The first thing my guests said when they came into the house was "what smells so good?" This is such a fragrant recipe. And despite the daunting list of ingredients, it is easy to make. I used "lamb stew" lamb which was already cubed, but next time I think I will get a better cut of meat . The only other change I'd make is to use a little less broth. I will definitely make this again, thanks!

Crustless Cranberry Pie

I've been making this pie for years and everyone always loves it. I follow the recipe with no changes. You can get it in the oven in under 15 minutes - so easy to make!

Roasted and Curried Butternut Squash Soup

Melissa's Turkey Meatloaf

So quick and delicious! I didn't have soup and so used spaghetti sauce instead. I had only 1.2 lbs of turkey and used a 9x9" pan instead of 9x15". I put some shredded mozzarella on top towards the end of the cooking.

Zucchini Frittata

This was a delicious way to use the seemingly endless bounty of zucchini from the garden. I didn't have Swiss cheese so used parmesan and mozzarella instead. A good way of draining the grated zucchini is to wrap it in a paper towel and squeeze.

Sesame Noodles

This was a big hit when I made it for company. I used fresh linguine and because I added shrimp and broccoli, I decided to double the recipe. I doubled every ingredient except the sugar, and it was sweet enough. I'll definitely make this again!

Strawberry Bread

I used applesauce instead of oil, half sugar and half Splenda, and half white flour/ half wheat. I made just one loaf, and the modified amounts all worked out great. Next time I'm going to add a little vanilla and maybe some lemon zest.

Banana Oat Muffins

Did you know that Dunkin Donuts muffins have more calories than their donuts? I made this recipe with apple sauce instead of oil, half whole wheat flour, and half sugar/half Splenda. They were good, but next time I'm going to add cinnamon and maybe raisins. By the way, 1 cup of mashed bananas equals 3 medium sized bananas.

These were so good! I used only 3/4 cup sugar, 1/4 oil and 1/4 applesauce, and did half white flour and half whole wheat. They were done in 22 minutes so set your time for 20 minutes in order to check on them.

Raisin Buttermilk Coffee Cake

I was looking for a way to use up some buttermilk and came upon this recipe. This cake is AMAZING! I added a little vanilla and cinnamon, and made extra topping but otherwise followed the recipe as is. I could see substituting blueberries for the raisins or even cinnamon morsels. So good!!

Fig Spice Cake

So good!!! I made it for four people and we ate most of it within an hour. I substituted pecans for walnuts and per the advice of another reviewer, put the figs into the food processor instead of chopping them. I will be making this over and over!

Cranberry-Pumpkin Cookies

These were yummy! The only change I made was to substitute white chocolate morsels for the walnuts. The only reason I'm giving them four stars instead of five is that they were a little too soft - very cakelike. If anyone could help me make a chewier batch, I'd be very grateful!

Blueberry Zucchini Bread

Yummy! Next time I will use three cups of zucchini, though. I made two large loaves, baked for 1:10. Used a little under 2 cups of sugar and did half oil and half applesauce.

Mediterranean Puff Pastry Chicken

This is the first recipe I have rated or reviewed and I felt compelled to do so because this recipe is so incredible! Our company said that it was better than an expensive restaurant. Like others I rolled out the dough and was able to wrap two breasts per sheet. I brushed them with an egg wash, and instead of cutting them to test doneness, I used a meat thermometer. If you're serving this for company, go easy on the hor d'oeuvres because it packs quite a punch!

Roasted Chicken with Risotto and Caramelized Onions

This is a delicious meal, I served it for company. The total time of 45 minutes listed in the recipe, however, is not accurate, I would say the recipe takes closer to 1-1/2 hours. Roasting and cutting up the chicken, and especially making the risotta, are very time consuming. But if you have time , it's a fabulous dish!
