Almond-Crusted Tilapia

Reviewed: Sep. 19, 2009
I really enjoyed this recipe! The crust was really tasty and went well with the white flaky fish! I had no problems with it sticking to the pan (I have t-fal pans) and did not add extra butter. I sprinkled an italian cheese blend on top, it worked really well! I might add extra pepper and spices next time but the almond/parm taste is good on itw own too...

Terry's Texas Pinto Beans

Reviewed: Sep. 19, 2009
I was looking for something to use up some fresh beans and I also had just bought some green salsa. Good recipe! Mine came out a little too spicy so I added some sugar and more liquid...but overall really good! Will repeat!

Zucchini Brownies

Reviewed: Sep. 19, 2009
I was kind of scared beacuse the mixture was very dry and crumbly before adding the zucchini. They turned out really great! I think they would be good without the frosting even but who doesn't love sugary creamy frosting!

Master Recipe for Rich and Creamy Cheesecake

Reviewed: Mar. 1, 2009
I make a lot of cheesecake but I usually make it "simple" no sour cream and no cream..but I decided to give this one a shot. It was really good! A lot creamier than those that I usually make! Since it was my first time making this one, I kept to the original version. I just topped it with blueberries and strawberries. Also, I made a more traditional crust. I can't wait to experiment with some variations...

Lemon Garlic Tilapia

Reviewed: Feb. 23, 2009
I really liked this recipe. So simple and so good! I added frozen broccoli to the pan in the last 15 minutes or so. I dont eat fish very often and hate it when it tastes too "fishy"...this was perfect!

Soft Chocolate Chip Cookies II

Reviewed: Feb. 23, 2009
These were a big hit with my boyfriend and his family! He likes chewy cookies. I took a bunch of them to his nieces and nephews and they loved them! I had made them with milk chocolate chips.

This really was not our kind of desert. Not sure if its the recipe or if it just wasn't our taste...

15-Minute Marinated Chicken

Reviewed: Feb. 23, 2009
This was good. I put the chicken in the marinade and then froze it. I took it out the night before I was going to cook it. So it marinated for a lot longer. It had a good taste. I added frozen broccoli flowers to it in the last 10 minutes to add some color and some vegetable. I will make this again!

Spicy Rapid Roast Chicken

Reviewed: Feb. 23, 2009
I really liked this recipe and most importantly my boyfriend did. CHANGES: I marinated it in the spices for 24 hours before baking it. Also I baked it at 350 for about 2 hours, basting it after the first hour.I followed other reviewers and doubled the spices (not the salt) and added 1/4 cup (about) of water to the pan. DELICIOUS!

Cajun Chicken Pasta

Reviewed: Dec. 1, 2008
This was really good! It was spicy and nice! I modified it slightly (made a roux, added evaporated milk and probably will make extra of the thick white sauce cause it needed a bit more than the 1 cup...) but relatively simple, and good meal...

Zucchini Parmigiana

Reviewed: Jul. 29, 2008
Loved this recipe! I might have used more cheese (cause I didn`t measure it) which might have taken away some of the "healthiness" but this is delicious! I used dry spices cause didn't have fresh, used a classico tomato sauce (with basil), cottage cheese and whole eggs instead of egg whites (would not know what to do with all those yolks after), it is great! Will definitely make again..

Magic Peanut Butter Middles

Reviewed: Jul. 25, 2008
I was disappointed with these cookies! I thought they would be amazing, and they do look neat when you split them in half. BUT I found the dough was very very dry and the filling was a bit dry too. Not only that I had so much leftover filling that I ended up throwing away cause I wasn't sure what to do with a peanut butter sugar mixture...

Slow Cooker Marmalade Curry Chicken

Reviewed: Jul. 25, 2008
I liked this recipe, Im always looking for good slow cooker recipes (I put it on at night, wake up, its done and I pack it for lunch)...However, I had way too much sauce for the amount of chicken. I did not find it too sweet but I used "no sugar added" marmalade. I added cornstarch to thicken but still found it to be too much and too thin. Will probably make again, but with less liquid.

Mediterranean Puff Pastry Chicken

Reviewed: Jul. 3, 2008
After reading a couple reviews I used one box (which has two squares) of puff pastry for 4 chicken breasts. I rolled them out very thin. I didn't do the second layer of spinach cause I felt it was getting very fat and I wouldn't be able to wrap it properly. I like the combination of flavors the sun driedk, the pesto, the feta, the spinach. It was ok....I will make again, but with modifications. Next time I'd probably cut the chicken thinner and maybe smaller chunks, as well maybe I would marinate the chicken in the pesto so the chicken itself isn't as white and bland. Or maybe even try a mixing small pieces of chicken with the feta and tomatos before putting in the pastry... AS WELL: in reply to some other people's reviews, the receipe calls for puff pastry not phylo dough...
