Pumpkin Bread

Yum yum! I thought it would be too spicy, but it turned out delicous. I used a pumpkin I was carving for halloween and put the extra chunks in a food processor to puree it. It turned out perfect.

Curried Chicken Tea Sandwiches

I made these for an afternoon luncheon and they were a big hit. I diced up the celery so the pieces were not so big. I served it on many croissants.

Perfect Turkey

This recipe was great. I did a couple things different. I skipped the wine and added some apple cores in the body. I made little slices in the skin and put some butter pats inside the skin as well as all over. I used a cooking bag to keep it moist.

Gingerbread Cookies I

My cookie due was too dry (I may not have had enough molasses). I had to knead in some milk to save my dough. The cookies' flavor turned out good, but not as soft as I would have liked.

Ribollita (Reboiled Italian Cabbage Soup)

I made this soup for our Christmas Eve dinner. It was very labor intensive but worth it. I think we had even more than 12 servings. I substituted canned beans for dried ones.

Zucchini Cream Pie

I reduced the sugar as others stated and adjusted it for 10 servings because I wanted a thicker pie. I have no idea how others removed seeds from a zucchini - there are hundreds. I skipped seeding unless one looked hard. No one could tell when eating it - smooth as could be. I wish the recipe gave a guideline for how long to cook it. I baked it for at least an hour. A knife never came out clean for me, but I thought it had to be getting done because the crust and top were starting to brown (slightly). After it cooled, it did set up solid. Everyone liked it.

Sweet Potato Casserole VI

Everyone's favorite dish at Thanksgiving. It was sweeter than pumpkin pie so I reduced the sugar on the second batch. I used one can of drained yams and used my electric mixer to mash them a little bit. I used a smaller square baking dish. Keeping 4 or 5 whole pecans and placing them like a flower in the center before baking makes it look nice.

That Good Salad

Everyone loved this salad. They started calling it the BLT salad. Five stars! Next time I may add an avocado and a little less cheese. Delicious as is.

Fish Tacos

I made this with tilapia and mahi mahi. I couldn't task much difference. Like others, I added some more spice to the fish (cumin and garlic). This is definitely a recipe I will make again.

Greek Souvlaki Dressing

This dressing is great and serves more than four salads. Like others said it is oily, so I think it would be best lightly dressing a salad not drowning it. I don't think I would change the amount of oil just use less on the salad. I served on romaine lettuce with kalamata olives, feta cheese, tomatoes, red onion, and carrots. I didn't have dry mustard so I used yellow mustard instead. I needed it right away so we couldn't wait two hours - it was delightful. This is a keeper!

Asiago Sun-Dried Tomato Pasta

We liked this meal. I think I would have looked for ways to use fewer dishes next time. I don't normally measure bacon in cups. I cooked 7 slices and crumbled it and that seemed adequate. Green onions is another thing I don't measure in cups. I used 4 green onions and that seemed to work. I subbed out half and half and 2% milk for the heavy cream. It was still plenty rich. It says it serves 8, I think 4-5 adult main course servings is more accurate.

Chocolate Pecan Pie III

The flavor was good the consistency wasn't great. I used a chocolate graham cracker crust. It didn't overflow, but it was puffed up when I pulled it out of the oven at 55 minutes. It was too fudgy/gooey even after chilled in the fridge overnight. If I make this again, I'd try others suggestions and maybe cook a little longer.

Wild Rice Soup I

We liked this soup, but serving size is WAY OFF! There is no way you will get 8 servings as written - unless you are giving everyone just 4 ounces. I added two cups of shredded chicken and doubled carrots and wild rice and it made 6 bowl size servings. We used 2% milk instead of half and half - turned out yummy.
