Cornbread Muffins II

These were really good! Very easy and quick, and super tasty with a bit of butter and honey. I only had one cup of buttermilk so I used normal milk for the other half and they were still fine. Also, I can't find cornmeal here in Australia so I used polenta. Still delicious! Thanks!

Easy Vegetarian Red Beans Lasagna

This is really good! I tried to make it a tiny bit healthier/cheaper to make for my own needs so I made a few little changes. Added a bit of cottage cheese and grated light cheese in between the layers. Used light pizza mix cheese on top (much cheaper!) instead of gruyere. Used light soy milk instead of regular. Added in some diced carrots. That's about it! This was super tasty and a bit addictive!

Jay's Signature Pizza Crust

So easy and absolutely delicious! I have never made a yeasted crust before and it was amazing. Added a bit of garlic powder, onion powder, and oregano for flavor. Yum!

Dill Vegetable Dip

Very simple. I served it at a girl's night and got rave reviews, even though I thought it was pretty standard! Everyone seemed to think it was very original, and several asked for the recipe. No complaints here!

Butternut Squash Soup

Yummmmmm! I followed the recipe exactly (only thing was my squash was already pureed as it was leftover from when I was making a pumpkin pie last week). So i didn't bother pureeing the soup, just let the onions be a bit chunky. SUCH good flavor, and I used about a third of the cream cheese. Try it!

Cream Cheese Tart Shells

These are good! I used them to make mini pumpkin pies. Had to bake them about 15 minutes on their own, then put in the pie filling and baked again for about 40 minutes. Turned out pretty well, though the crust doesn't have heaps of flavor and is slightly greasy, I think that the easiness of the recipe makes up for it!

Mom's Pumpkin Pie

Yummy!!! I made mini pumpkin pies with the Cream Cheese Tart Shell recipe also on this site. I was scared cause my mom has always made the pumpkin pies and this was my first time trying to do it on my own- had to introduce my Australian friends to the deliciousness of pumpkin pie! This recipe is huge! I halved it and it still made 24 full size tarts (I used a regular size muffin tin). I also live in Australia and discovered that they don't have canned pumpkin here, so I was brave and used a real pumpkin! Not difficult at all, and delicious flavor!

Lebanese-Style Red Lentil Soup

This is good! I basically used whatever I had, which meant I added cauliflower and carrots to the sauteed veg. I also only had canned lentils, and no cilantro, but it still turned out yummy! I also had to use lime juice instead of lemon and veggie stock instead of chicken, but this versatile recipe handled it all great! Thanks!

Mahogany Chicken Wings

These are yummy! I made them for a party and all but two disappeared, and the boys all complimented me on them throughout the night. Very easy. I let them marinate overnight because I had the time, and when I was baking them I forgot to turn them at all, but they turned out fine. I used a disposable foil cookie tray that I put in my pampered chef bar pan. Delicious!

Apple Crisp IV

This was very yummy! I followed the recipe exactly, except I used a tiny bit less nutmeg because I don't like it that much. It was perfect, and I got rave reviews from my friends! It was very easy, great with vanilla ice cream, and also filled the house with a delicious scent while baking!

Lemon-Cranberry Mini Loaves

These were yummy! I accidentally zested the lemon down to the white because I didn't know the white was bitter, but no one complained! I gave them away as mini-loaves in beautiful keepsake loaf pans. Thanks!

Vinegar Pecan Pie

No Cook Icing

This is yummy! Very easy, too! I was a little worried when I put all the ingredients in the bowl and saw a brownish colored mess, but was more than pleased to discover that after some faithful beating, it turned into a beautiful, fluffy white icing! Thanks!
