Artichoke and Tomato Chicken
Wow! Not to take away from your great dish as it is Maggie, but I did not have Mozz cheese in the fridge. I did have a bar of Goat Cheese though and I used that. It was a wonderful surprise and I felt I should share that tidbit. I made some whole grain Penne for the side and made great use of the excess sauce it created. Oh YES! we will indeed do this again.

Prosciutto Wrapped Asparagus
I added 1/3 cup crumbled blue cheese to the neufchatel cheese. The cheese held up very well and it was a delicious side for filet mignon. My son-n-law does not like blue cheese but he went back for a third serving. I will definitely do this over & over.

Blueberry Dump Cake
Easiest way to make a cobbler type dessert I've ever made. Mixed the fruit, sugar & cinnamon in a bowl & poured into a buttered casserole dish. Used 2 1/2 c fresh blueberries & 2 c diced fresh peaches. Down cinnamon to 3/4 tsp. Up the butter to 3/4 c & cut into bits scattered on top the cake mix to avoid the dry cake mix issue. Baked 45 min & broiled last 2 to brown the top just right. Serve warm w/ice cream....OMG!!! Reminds me of down home cobbler!
