Turkey Potato Casserole

YUM! My whole family loved this. I layered prepared wild rice stuffing mix on bottom, turkey on top (left over from the great crockpot turkey breast recipe on this site), then sauteed mushrooms, onion and celery on top of that, canned green beans next, then one can Golden Mushroom, one can 98% fat free Cream of mushroom soup, both mixed together with some leftover turkey broth, soy sauce and pepper, then topped it all with some homemade mashed potatos (made with fat free evaporated milk) and finally, a sprinkling of 2% shredded cheddar. If making it from Thanksgiving leftovers, I would have most of these ingredients already prepared. Everyone had seconds and a few of us had thirds.... Really, really good!

Slow Cooker Turkey Breast

This was so easy and came out absolutely delish! I think I'll make this regularly to have turkey for sandwiches during the week -- way better than cold cuts and you don't have to do the whole Thanksgiving turkey thing to get it! This would also be a great way to make extra white meat for a holiday when you're worried that your turkey won't be enough. I put about a half a cup of white wine in the bottom of the crock pot, added some thickly sliced carrots, a sliced onion, about 4 stalks of choppped celery and a couple garlic cloves. Added salt and pepper, placed the turkey breast on top, with the onion soup spread on it and under the skin and cooked it on low for 8 hours. When it was done, I sauteed some mushrooms (4 containers: two each Baby Bellas and shitakes, sliced), onion and garlic in a little olive oil and butter in a skillet, then added 1/2 cup white wine and about 2 cups of the broth from the crock pot. I brought that to a boil and mixed another half cup of broth with a couple tablespoons corn starch to make a "slurry". I added that to the skillet and it was so delicious over the turkey! Italian Sausage Tortellini Soup

YUM! My kids each had 3 bowls! I used fresh,packaged whole wheat cheese ravioli, canned tomatoes, and added fresh corn off the cob (had some left over from last night's cook out) and fresh basil just before serving. I also used homemade chicken broth that I had in the freezer, instead of beef. I added a dash of chili powder and crushed red pepper because the grocery store was out of spicy Italian sausage, which I wanted to use instead of sweet. This was tasty and healthy! Looking forward to tomorrow's leftovers! I will make this often.

Strawnana Bread

Wow! These are yummy. I doubled the batch, because I had a lot of strawberries to use up. It made two loaves and 24 muffins. I substituted applesauce for half the oil, and used half white, half brown sugar. I omitted the nuts (personal preference) and substituted lemon zest for the orange. I used a bit more strawberries than called for and didn't mash them, the mixer did the work. I also added about a half a cup of homemade strawberry jam after reading the reviews that there wasn't enough strawberry flavor. There is now! My kids are plowing through the muffins as I type this. I keep hearing: "OH MY GOSH, MOM!!! These are delicious!!"

Napa Cabbage Salad

I made this yesterday for the 4th of July. I've had this kind of salad before, but had never made it myself. This was much better than any I'd ever had! I added a bag of shredded carrots and subbed sliced almonds for slivered, because I like them better. I used the seasoning packet (Oriental Ramen)on the crunchies. Delicious!!

Grilled Spicy Lamb Burgers

Wow!! These were SO good! Everyone-- from those who love lamb, to those who had never tried lamb-- loved them. I served them in pitas with feta cheese and Tzatziki Sauce II from this site (I added a little lemon juice to the sauce, used fat-free yogurt and didn't strain it). Really delicious!!

Slow-Cooker Chicken Tortilla Soup

I made this for a crowd (doubled the recipe) and every single person asked for the recipe. It was so tasty, with enough heat to make it special, but not so much as to make anyone miserable. I used one can of spicy enchilada sauce and one can of medium. I also used the Moist Garlic Chicken recipe from this site (a microwave recipe for boneless, skinless chicken breasts), omitting the optional spices and the butter in that recipe. I also added chopped avocado to each bowl before ladeling in the soup. My family asked me to make it again the very next day. I love that it is very healthy, while being so delicious!

Black Bean and Corn Salad II

I love black bean and corn salad and this was the best I've ever had! I had some leftover boiled corn on the cob and used that. I'm sure it would still be good with frozen corn, but the fresh was really delicious! I think the dressing is what makes this salad special.

Cochinita Pibil

After a frustrating search around town for Achiote paste, I did a computer search and it led me right back to this web-site for a recipe to make your own! This was delicious! My kids loved it without the onion sauce. My husband and I preferred it with it. We both kept going back for just one more bite.... I served it in tortillas with homemade guacamole, but after one yummy wrap, we just ate it plain. Thanks for a very different and wonderful recipe! I will make this again and again -- a new family favorite!
