Grilled Peanut Butter and Banana Sandwich

One of my all time favorites! Definitely use over ripe bananas for this. I also sometimes make something similar but without bread- just heat a mashed banana in a pan for 3-4 minutes, then drizzle with a bit of peanut butter and cook an additional 30 seconds.

Cheesecake Brownies

Made this for a dinner party and it got rave reviews! I only had 4 oz of neufchatel cheese so I mixed that with 2 oz sour cream and 2 oz. cottage cheese- may not sound great, but once blended it tasted fine. Its actually a great way to lower the fat and calories a bit!

Pastry Cream

This came out so well! The suggestion on how to add the hot milk to the egg worked like a charm. (I've always been told to "temper" the egg then dump it in an stir- it never works.) Thickened nicely and tasted great. I had intended to use it for a cream puff cake, but that didn't cook right. Instead I used it with vanilla cake to make a trifle- awesome!

Cream Puff Cake

Followed the recipe for the crust exactly but it tasted very eggy. Maybe it was because I used fresh eggs? (we have a farm- if you've never had eggs that weren't purchased as a grocery store you don't know how different they are!) Also didn't puff up as much as I hoped it would.

Sheryl's Baked Potatoes

These were great and easy! I had no problem cutting them into slices. I used olive oil instead of butter, as I like it better. I also tucked thinly sliced onion and garlic between the layers- which really helped it fan out nicely. This is a wonderful basic method that could be adapted using different herb, spices, cheeses etc.!

Peanut Butter Noodles

Very good recipe! Wonderful as is, or with 1/2 teaspoon of cayenne pepper to make it a little spicy. I like it chilled with veggies cut into match sticks (broccoli and carrots are good) that have been lightly steamed and then top it with sesame seeds.

Sugar Cookie Icing

Loved this recipe! Held its color well and became firm but not too dry after a few hours. I really want to try to make a bouquet of sugar cookies using this glaze to decorate them...

Banana Pancakes II

Good recipe! I made them with skim milk rather than buttermilk because it was all I had- they still turned out well! I served them with a little bit of powdered sugar on top and a side of cinnamon applesauce. It was a nice lower fat, lower calorie pancake meal.

Chocolate Covered Cherries

These are pretty as a gift- but way too much effort to just make for myself. I had trouble getting the "dough" to a point where I could wrap it around the cherries. I had to add extra sugar and pop it in the freezer for a while. I then put the cherries in the freezer for several hours and took them out one at a time (because otherwise they just melted) to dip them.

Tofu Parmigiana

This was so good! I took other reviewers advice and cut the tofu up the night before, squeezed out the water and froze it. I also baked the tofu instead of pan-frying. It came out really well!

Cake Balls

I was so excited to try this recipe- they sound so good and look so pretty. I did a test-batch because I was planning to make them for a holiday part- so glad I decided to test them first. They are really gooey and overly sweet. I'm going to try petit fours instead.
