Apple Strudel Muffins

I too used the recommendations of TUNISIANSWIFE and the flavor came out fantastic!! The shredded apple with just a few chunks is the perfect combo (and mixing with the sugar first really did pull out a lot of liquid to get mixed in). HOWEVER, when I pulled the muffins out of the pan (used paper liner) there was a yellow liquid in the bottom and the paper was drenched. I soaked it up but when I peeled off the paper, the muffin was all suck to the inside of the liner. Not sure what I did wrong. I will try again without liners and see what happens.

Cube Steak Parmesan

This was a total hit in my house, super tender and easy too. My husband isn't a big cube steak fan but I had some in the freezer to use up so I didn't tell him what it was at first, but by the end of the meal we both agreed this is a keeper. I made a few changes: a) used light/wheat bread crumbs instead of crackers and mixed in a bit of ground flaxseed b) used olive oil instead and a healthy garlic/chunk tomato sauce so didn't need oregano or sugar c)slightly banged meat with tenderizer first. I got the oil hot to really crisp the outside first and had to bake for closer to 10 minutes to get the cheese really melted (I think the few extra minutes helped with tenderness) You'd never know this was a "healthier" version! Served over spaghetti squash.

Salmon Patties III

This was a toss up in my house - husband loved it, but I wasn't a huge fan. I "winged" the recipe a bit, based on leftovers I had from this weekend. I used salmon that had been slightly marinated in a garlic/thyme paste and garlic-mashed potatoes. Not sure if my salmon and pototoe ratio was exact. Didn't use any Italian seasoning as my salmon and potato already had garlic, thyme and salt/pepper. Cornflakes are a terrific addition and really compliment the soft/flaky inside. Super fast if you use leftovers. I made an herb-mayo sauce that my husband loves... that saved it for me. (Mayo, basil, parsley, lemon juice, djion mustard, cayenne pepper, green onion... sooo good!) Will try again.

Turkey and Hash Brown Casserole

So easy and so good - I was really surprised! Took about 20-25 minutes to prepare and more like 30-35 to cook. I did use regular "cream of" and cheese, but did use non-fat sour cream and skim milk. I also sauted a bit of cornflakes and sprinkled them on top for some crunch. Next time I might add some seasonings or fresh garlic in when browning the turkey, and I'll finely chop the onions to spread out the flavor a bit more. And it made a ton, enough for 3 large guys and lunch leftovers for the next day.

Cauliflower with Dijon Sauce

Yummmm! I'm not a huge fan of cooked cauliflower, but I had some frozen and need to use it up somehow. I used light mayo, honey dijon, and skim cheese and it was great. I used about 1/3 of what the recipe called for. Just the right touch. I'll definitely be making it again soon! (This would be great for those with kids that are picky eaters - as I was years ago!)

Easy Chicken Breast

Wow! Super easy and delicious! Yesterday was the first really chilly day this season and I wanted something warm and comforting for dinner. This did the trick! My husband was so impressed, and it only took a few minutes to throw together! Before pouring the mixture on, I sprinkled the chicken with ground pepper, garlic salt and some italian seasoning. Mine didn't come out too soupy as I added extra chicken so I'd have enough for my husband for lunch the next day and put some in the freezer for another quick meal. Served over egg noodles with a side of broccoli. Definitely a keeper!!
