Best Baked Chicken

This is a family favorite and a dish that I rarely have leftovers from. I don't have celery salt so I changed the recipe a bit. I also leave out the butter in attempts to be a bit healthier. Cut down the 2 tsp garlic salt to 1 tsp and add 1 tsp of onion powder. I also leave out the lemon when I am serving it and give each piece an additional squirt when I plate it. Oh and the one thing that adds a lot of flavor is using cornbread stuffing instead of regular.

Honey-Mustard Baked Chicken

Very simple and tasty. Was a little too sweet for my husbands liking but I enjoyed it. I cooked it slightly different. I cooked the chicken in a pan with a little bit of the sauce on top. When the chicken was cooked almost all the way through I poured the remaining sauce over, turned the heat down and simmered for about ten minutes. Served over seasoned white rice.

Chicken and Wild Rice Casserole

My family LOVED this and that is a hard thing to accomplish. I changed the recipe around a bit but not too much. I cooked 4 chicken breasts in a crock pot on low for 5 hours. Then strained the chicken fat, added back in the chicken, the broth, 1/2 cup wine, the onions & curry and continued to cook for an hour. After an hour I shredded the chicken when I was mixing everything together but I added 1 1/2 cups of fresh mushrooms, a tsp of garlic powder, a tsp of salt powder, 1/4 of a tsp of cayenne pepper and 1/2 cup of Parmesan cheese. I omitted the celery. It was delicious!
