Sandy's Chocolate Cake

Reviewed: Oct. 7, 2011
AMAZING!!!! I will never make a cake mix again. FYI, leave out the Coco and you have an equally amazing brown sugar vanilla cake!

Quick Yeast Rolls

Reviewed: Sep. 4, 2011
These were AWESOME! I took another reviewers suggestion and mixed everything in my mixer with the dough hook and then let it rise in the same bowl. I didn't add any additional flour at that point but I did have to add some to break it into pieces. I baked them in a greased 9X13 pan and they were soft and light and wonderful. Thanks for sharing!

Baked Garlic Parmesan Chicken

Reviewed: Apr. 19, 2011
So I added potatoes to this and ended up liking them more than the chicken! I tossed them in the garlic oil before I did the chicken and put them in the bottom of the greased pan I sprinkled them with salt, pepper and some of the breadcrumb mixture. I just laid the chicken on top of the potatoes to bake. Both were yummy!!!! Thx for sharing!

Spicy Rapid Roast Chicken

Reviewed: Mar. 7, 2011
This was really yummy! I used two bone in chicken breasts and cooked them breast side down as suggested by another reviewer. I added potatoes for the last 20 minutes of cooking and covered the pot so they would steam a little bit. They were wonderful!!

15-Minute Dinner Nachos Supreme

Reviewed: Dec. 3, 2010
This was pretty good! I browned and drained the meat before I added the taco seasoning so I didn't pour any off with the fat. Then I added 1 1/2 c water, a can of tomato soup, an 8 oz can of tomato sauce, 1/2 jar of salsa. Then I added 1 cup of regular long grain rice. I let it all simmer covered for about 20 minutes and then stirred it up to get the rice off of the bottom. It was really good! The rice has so much more flavor and texture when you cook it with sauces and there was enough thickened liquid left over to give it a really nice sauce. I served it with lettuce, cheese and red onion. Super yum!

Southwestern Egg Rolls

Reviewed: Sep. 25, 2010
I too left out the spinach and used eggroll wrappers, and they were AWESOME! Quick tip on the chicken: I marinated mine in lemon juice, salt pepper olive oil and some basil for 2 hours before I cooked it. Chicken was incredibly tender and added a ton of flavor. Super YUM!

Chipotle Honey Roasted Peanuts

Reviewed: Sep. 25, 2010
These are a little weird. I love the honey chipotle sauce at Chili's so I thought I would like these, but I think the other spices give it an odd flavor. I also made these like candied nuts where I boiled the sugars (I used brown and white), butter, honey and spices to 234 and then tossed in the toasted nuts and spread over waxed paper to cool. The texture was awesome, but I think next time I will just use the sugars, butter, honey and chipotle.

Alienated Blueberry Muffins

Reviewed: Sep. 12, 2010
I'm only giving this 4 stars because of my few changes, but these are SUPER YUMMY! I halved the recipe, leaving the vanilla and salt in the original amounts. I also used less sugar than called for: 1/3 c white sugar and 1/3 c brown sugar. I used 2/3 c AP flour and 1/3 c whole wheat flour. I added 1/2 tsp cinnamon and used 1/2 c blueberries and 1/2 c chopped strawberries. I was also very lazy with the prep, I mixed all of my wet ingredients including the softened butter in a big bowl and then stirred in the dry ingredients before adding the floured fruit, this didn't make any difference in the texture. Love them!!

Chocolate Frosting I

Reviewed: May 24, 2008
I used a 1/2 cup of butter and it worked out great for me. It is sweet but you can up the cocoa if you want it less so. I used evaporated milk so it would have a little longer shelf life. Thought it was great! Thanks for sharing!

Irish Soda Bread

Reviewed: Mar. 8, 2007
This came out so YUMMY!! I left out the raisins and had to use milk with a little vinegar because I didn't have any buttermilk, but it is wonderful! Cripy on the outside and a pretty yellow softness on the inside. I'm sharing the recipe with my best friend for her St Patties Day party. Thanks!!

Easy Beer Bread Mix

Reviewed: Mar. 2, 2007
Thank you so much for this recipe!! I actually left out all of the herbs. One of my local favorite steak places serves Shiner Bock beer bread with honey butter that is to die for. By leaving out all of the herbs and using Shiner as my beer I managed to get pretty darn close to theirs! Thanks again it was awesome!!

Strawberry Shortcake

Reviewed: Sep. 15, 2006
I made this for my boss for her birthday and I am only giving it 5 stars because everyone really liked it; but it did not rise at all! I expected it to be much more full and it stayed very flat. Everyone liked it and said it was really good, but I am going to try again and see if it will rise.

Pumpkin Cheesecake Slices

Reviewed: Sep. 10, 2006
I had to alter this recipe a little bit, because I did not have all of the ingredients. I only had 1 cup of graham cracker crumbs so I added 2 tbs. sugar to it and 4 1/2 tbs of melted butter, I used a 9X9 pan. I only used 1 cup of sugar, and 1/2 cup sour cream, everything else I left the same. I added about a tsp. of pumpkin pie spice, and baked for 45 min. I'm not sure if pumpkin pie filling is different from just canned pumpkin, but my only problem with the finished product is a lack of spice. Next tme I will add a lot more pumpkin pie spice. Other than that it came out really good, very creamy!!! Thanks for sharing.

Garlic Chicken with Orzo Noodles

Reviewed: Sep. 6, 2006
I am only giving this 4 stars because I had to modify it just a little bit. I brought a small pot of chicken broth to a boil and cooked the orzo in that. I had planned to drain off any extra broth, but it ended up soaking all in and making the orzo really nice and creamy. I sauteed the garlic and red pepper in olive oil then added the pieces of chicken. When the chicken was finished I added the orzo to it and stirred letting it sit on low heat for about 10 minutes. The result was YUMMY! My husband really liked it and has asked for it again. Thanks for sharing!

Banana Cream Pie Made Easy

Reviewed: Aug. 23, 2006
This came out so awesome! For those reviewers who talked about it being too thick, I only had about a cup of cream so I substituted low fat milk for the other two cups and it came out perfect! Not to mention that it was a perfect consistency and lower in calories too! Thanks for sharing.

This is so AWESOME!!!! I love that it was so easy to make and even yummier to eat, I cannot stop eating it! I did use buttered wax paper on the cookie sheet so that it would be easier to break up. WONDERFUL STUFF! Thanks for sharing.
