Easy Blueberry-Lemon Parfait

Yummy and healthy snack or dessert. The flavors are very complementary together. I will make this again and again. It looks pretty in a parfait glass too.

Broccoli With Lemon Almond Butter

This is a very good recipe. The combination on flavors is incredible. It even converted my two "green-beans-are-the only-green-veggie-I'll-eat" kids! I am impressed. Five stars plus. Broccoli is a Super Food Rx.

Ham Balls

Awesome recipe! This one will be a staple in my recipe collection for using up left-over ham. I ground up my own ham in the food processor. This made a HUGE pan of meatballs that I am using up in sandwiches. Left-over leftovers!

Oven Brown Rice

This was so good. I fixed it exactly like the recipe only using low sodium broths and covering it. I stirred it up, popped it in the oven and went out running errands. Couldn't have been easier.

Chocolate Eclair Dessert

Really good recipe, easy too. I would have liked better with ho'made chocolate frosting instead of the Betty Crocker canned milk chocolate frosting I used. But no one else at the potluck complained. They were still raving about it the next day.

Cran-Apple Salad

I get this magazine and made this salad. It is very easy and good and looked festive. I used the candy coated walnuts and added them just before serving. My parents loved it. I did too. The kids and husband weren't crazy about it but they don't branch out much from the ordinary. I think I will make this for our church's pot-luck Thanksgiving feast.

Chicken Fried Chicken

My pre teen daughter likes this so much she took it to a recipe swap her home ec class had. Excellent and crunchy. I butterflyed the chicken breasts. A family favorite.

Very Easy Fruit Salad

Easy Apple Crisp

Fab-u-lous! At first I thought there would be way too much crumbly stuff because it looks like a lot when you are adding it on top of the apples and water. But I went ahead and used the whole amount and boy am I glad! I wouldn't change a thing!

Tim's Sausage Stew

With the sausage I used, this was a great combo of flavors. It seemed a bit greasy, so I chilled it overnight then skimmed the fat off the top the next day. Next time we get italian sausage, we will get an extra couple pounds so we can make this stew!

Turkey Pot Pie I

The combination of spices is wonderful with turkey. It smells great baking. I used with crust recipe for vegetable pot pie (also from this site) and both turned out great. This would have been a really full pie dish so I put it in the size smaller than a 9x13 pan (rectangle) and it was just right.

Crust for Veggie Pot Pie

Bolognese Sauce

Billy's Favorite Smoky Collard Greens

Yum. My 5 year old really liked these. The blend of sweet and smoky pretty much disguises the bitterness of the greens. I used canned collard greens because I was short on time and it was still very good. A TBSP of liquid smoke is quite a bit. Next time I will put about half that amount in.

Roasted Pumpkin Seeds

I made this for my daughter's Halloween party and they were delicious! The parents couldn't stop eating them. I followed the directions of the person who suggested adding a sprinkle of sugar after baking. It was just right with the salt I had added previously! Excellent.

Candy Corn Popcorn Balls

I am a homeroom mother in two of my children's classes and this is always a halloween favorite. I used orange Jello. Actually this would work well for any holiday celebration, just tint with Jello according to the colors of the season and add seasonal candy. For example, cherry or lime for Christmas with Christmas M&M's instead of candy corn.

Banana Pudding IV

I followed everyones advice and used 2 smaller boxes of pudding one vanilla and one banana creme. This made an excellent tasting desert! The bananas did get brown after a few days in the fridge despite using Fruit Fresh and the cookies got really soft. Next time I make this, knowing it will sit in the fridge for a few days, I will skip the bananas and cookies and just make the pudding! Yum.

Anniversary Chicken I

The chicken needs to marinate in teriyaki sauce for an hour or so before cooking. Just brushing it on didn't absorb much of the flavor. I used ranch dressing with the bacon already in it. This is a very good tasting, moist and easy way to fix chicken breasts.

Mom's Great Green Beans

I make this recipe every time I make green beans,now! My 10 year old daughter begs me to make green beans. Thanks for a great blend of seasonings to compliment a plain tasting veggie without adding a lot of fat or calories!
