Pumpkin Cake III

Reviewed: Oct. 1, 2013
This is a delicious cake! The only changes I made were using a fresh pumpkin from my garden instead of canned pumpkin and following the advise of others by using only 3/4 cup of oil along with 1/2 cup of applesauce. I did not have a handy sheet cake pan, so I used a 9X11 and increased the baking time by 10 minutes. It turned out perfectly. I frosted it with vanilla frosting to make more of a dessert, but frosting is totally not necessary as it tastes great by itself. Oh, and I am allergic to walnuts, so I used pecans. Thanks for the recipe, I have 7 more pumpkins from my garden to use up!

Butterhorn Rolls

This is a great recipe. Very easy to make with the awesome instructions. My 12 year old niece did all of the rolling and was so proud of herself when these beauties came out of the oven.

Delicious Ham and Potato Soup

Reviewed: Mar. 31, 2012
The family loved this. It was great the next day, too. I doubled the recipe. I also left the peel on about 3 of the potatoes and it looked great. Fantastic base recipe, you can add cheese, crumbled bacon, fresh parsley, sour cream, what ever you like :)

Creamy Veggie Fondue

Reviewed: Jan. 17, 2012
I had my first Fondue party and served several different cheese and chocolate fondues. This was, by far, the favorite of the evening. It was easy, creamy and maintained a great texture.

Candied Citrus Peel

Reviewed: Jan. 17, 2012
Made this with some grapefruit that my friend picked off of her tree for me. Everyone, young and old, LOVED these little 'candies'! It was my first time peeling the thin outer portion from a grapefruit so I used several different techniques, but in the end they all looked, cooked and tasted the same. I can't wait to try other citrus fruits. Thank you for posting.

Kalter Hund

Reviewed: Jan. 7, 2012
This recipe is excellent exactly as is. I see the reviews mentioning coconut oil, I will try that next time as I use coconut oil as often as I can for the health benefits. I did have a hard time finding a good cookie that would be suitable, but after searching in several stores I was able to setting on one that was rectangular in shape. I think next time I will bake my own cookies and make them to fit perfectly in my pan.

Pie Crust IV

Reviewed: Nov. 20, 2011
Excellent and easy pie crust. I also tried it with a cube of butter instead of shortening and it was perfect. This recipe is also plentiful, more than enough for a one crust pie allowing lots of extra overhang to make a very pretty crust edge :)

Chocolate Chip Banana Muffins

Reviewed: Jan. 24, 2011
These are wonderful, much better than any other banana muffing recipe that I have tried. They do not have that baking powder/soda taste that so many others do. Upon removing them from the oven, the tops were golden brown. While I removed them from the muffin pan they appeared to be slightly under-done with light middles and toasted tops and bottoms. I decided put them on a cooling rack and let them sit for a few minutes. They were done, just very moist. Don't let the initial texture scare you. They are so moist, I am tempted to bake some up in ramekins, serve them warm as a dessert with a fork or spoon and a dollop of whipped cream on top.

Chocolate Chip Cake Mix Cookies

Reviewed: Jan. 7, 2011
Great recipe! Perfect when you just want to make a couple dozen cookies without a great big mess. I made these with chocolate cake mix, craisins, and mini chocolate chips. They were very sweet! You could use any type of cake mix with complimenting mix-ins. I drizzled pink frosting in stripes across the top and used pink and red sprinkles to make them look more fancy.

Dutch Apple Pie with Oatmeal Streusel

Reviewed: Dec. 25, 2010
The best Apple Pie! The Oatmeal Streusel is amazing. I like to make regular apple pies, but didn't have time to make 2 crusts and I had one store bought crust in the fridge. I find that most streusel toppings are very 'floury' and bland, but this one was like a crispy oatmeal cookie on the top that blended well with the soft apples underneath. And it is made with basic ingredients that a stocked pantry would have. Thank you so much for the recipe!

Butternut Squash Soup

Reviewed: Nov. 21, 2010
Savory, creamy, rich and complex. This soup is very good and very easy. I had some left over chunked butternut squash that I used for a different soup recipe (we did not like that one!) so I was looking for something that I could do with it, with other ingredients that I had on hand. I had already boiled the butternut squash, so followed the recipe, except I did not cook it all together for 20 minutes. I just put it all together, carefully measuring out the right measurements of squash and water. I put it all in the blender and had wonderful soup in about a minute. This is seriously like a five star restaurant soup recipe, it would be wonderful served in demitasse cups as a starter to a meal. Thanks for posting, I will use this recipe again and again!

Magic Cookie Bars II

Reviewed: Nov. 16, 2010
Tip: I started spraying the inside walls (not the bottom) of a glass cake pan with Pam before I spread the graham cracker crumbs on the bottom. It keeps the sticky candy mixture from sticking to the side when cutting into bars. These are amazing. :)

Jamie's Minestrone

Reviewed: May 31, 2010
This is a wonderful, no fail soup recipe. I agree with the other raters, you can customize it to your family's liking. If you don't like something, leave it out. If you really need something else, then add it. There are so many wonderful flavors in this soup, an addition or subtraction will only make it better for your personal taste. I made it exactly as written and also more customized with extra carrots, a few potatoes and a can of chopped tomatos instead of tomato sauce. I also used lots of spices and herbs, it was a great dish to pour the 'end of the bottle' for many herbs and spices. Thanks for sharing, the whole family loved it.
