Polish Chicken and Dumplings

This soup was delicious, my whole family loved it. I didn't use cream soup or thicken with flour, just added a bit of sour cream in at the table.

Chewy Chocolate Chip Oatmeal Cookies

Making these right now. Not having a problem with them spreading too much, I fact I wish they would have been flatter. I did change things a bit though so that could have made the difference. I used half butter and half coconut oil. I used sucralose Brown Sugar blend and splenda in place of some of the sugar. The flavor is great as is.

Soft Oatmeal Cookies

Delicious cookies! I changed it a bit by using 1/2 cup coconut oil in place of 1/2 a cup of butter, and I added chocolate chips. They are moist and perfect! Oh and I didn't bother refrigerating or rolling the dough, just dropped on cookie sheet.

Chocolate Cherry Upside Down Cake

Fantastic! I used bing cherries since that's what I had. Didn't have much trouble getting it out of the pan... Just one messy spot but who cares? Looks delicious and is very moist. Yum!!

Best Ever Muffins

These are great! I added blueberries, cinnamon and vanilla to the recipe. I was leery of the high temperature so I set the oven to 375 and they came out perfect.

Banana Muffins II

Recipe made a dozen muffins, perfect! Only change I made was to use oil in place of the butter, for cost savings....feeding 4 kids gets expensive! Turned out wonderfully. Oh I also added chocolate chips.

Tater Tot Casserole

This is a good, simple weekday recipe. 4 stars because if I hadn't added water to the meat mix it would have been dry. I also added some French's french fried onions on top for the last few mins of baking and they added lots of great flavour.

Caramelized Chicken Wings

This was a very tasty sauce, the family enjoyed it. My hubby thought it tasted like Pad Thai. I did mine differently though as I had no desire to stand in front of the stove for an hour. First off, I used drumsticks rather than chicken wings. I doubled the sauce recipe (but reduced the sugar by 1/3). This was a little too saucy, would do 1.5 of the recipe next time. Mixed the sauce in a saucepan on the stove and heated it so the peanut butter would melt. I also coated the chicken with flour, pan fried the drums in oil then baked them in a 9x13 pan with the sauce poured over top. Baked them for about 55 mins. To serve I poured the sauce in a pan and thickened with cornstarch. Ate the sauce with the rice and a side of veggies. It was really tasty and would make again.

Blueberry Muffins II

Just made these muffins and they look and taste amazing, thank you for the recipe! I wanted to only fill one muffin tin so I reduced down to 12 servings and it was the perfect amount of batter. I used one large egg and I did NOT mash any of the berries, I didn't want purple batter. For those who have trouble getting them out of the pan, simply buy some paper liners for your muffin tins. I always use liners and never have a problem.

Sour Cream Coffee Cake III

It seems like it's a keeper :). Family is enjoying the cake right now. It is good, though I think it'd be better made in a bit of a smaller pan than a 9x13. I mean, it's moist but it was hard to spread in the pan, and even harder to spread the 2nd layer of cake on top of the cinnamon mix. Over all though, it's good and helped me use up some sour cream :).

The Best Sweet and Sour Meatballs

This is a great base recipe, but is kind of bland as it is. I added some onions, red pepper, and ginger which I sauteed before adding the rest of the sauce ingredients. It was great, family liked it, I loved it.

Split Pea and Ham Soup I

Yum, my first time making split pea soup. Used the bone from the Easter ham, added diced carrots and garlic to the recipe and used yellow peas since that's what I had. Very tasty soup!

Carrot Cake III

I've been using this recipe for years and the cake is delicious! It's very very moist and flavourful. The only change is to use 1 cup of brown sugar and 1 cup of white sugar in the cake and less than 4 cups of icing sugar in the frosting...start with 1.5-2 cups and try it, add a little more if needed but 4 cups is definitely way too sweet.

No Fuss Chicken

Won't make this again. Chicken was very very bland, half of the cornflakes fell off and got soggy in the bottom of the pan. I have no idea how this got a 4.5 star rating.

Cheddar Baked Chicken

This was good, though I changed it a little to use what I had on hand. I used crushed up cornflakes for the crust instead of puffed rice and I used olive oil instead of butter. It turned out great, very tasty :).
