Maine Wild Blueberry Salsa

Excellent Salsa. I love the blueberry addition. I was surprized how it went very well with the slight heat of the salsa. I would only add a bit more salt.

Crispy Orange Beef

definately leave out the sugar. the orange concentrate makes it sweet enough. I added red peppers and used chicken instead. my husband loved it and ate all the left overs. great w/ sticky rice. i would use more rice vinegar or less cornstarch on the meat so that the sauce is not so thick.

Maria's Pepper Steak

Fantastic! I would especially recommend this recipe for venison. This recipe takes all the "gamey" out of the meat. I did do the recommended adjustments (dash of red pepper flakes, and 2 tbsp of corn startch). I also reduced the honey amount to 2 tbsp. I made this for our deer hunting camp and all of the men LOVED it.

Creole Mexican Catfish

The amount of ingredients was not enough to coat one piece of fish. We ended up using pre-made redfish blackening spice. The tomatoes on top were a nice. The cooking time was too long. I cooked mine for a total of 25 minutes. It was much easier using a pre-made blackening spice, instead of making this from scratch.

Scalloped Corn

It was good, but uneventful. I left out the sugar and added 2 tablespoons of jalopeno juice. Everyone loved it then. With the leftovers, I mashed them into little cakes and fried them. That was wonderful with a little cheese on top.

Baked Corn

This is an great recipe for cornbread, but nothing spectacular. It tastes good and i'll probably make it again, but it's nothing more than corn bread w/ corn in it. it's a bit sweet too. i think i'll leave the sugar out and add jalapenos in it.

Baked Fish Creole

this recipe would probably be better suited for chicken. I hated it, but my man liked it. the rice was super bland, and the fish didn't go w/ the sauce. the sauce was really good, but i had to double the hot sauce to even taste it (guess it depends on the type of hot sauce). i won't make this again, but if i did i would reduce the amount of rice to 1 cup, increase the hot sauce and add about a tblsp of tony chachere's spice.

Angel Chicken Pasta

excellent recipe, super easy to make and very easy clean up. I found the wine taste a little strong, but i used a cheap dry white, i think it would go great with a delicate reisling. I didn't change any of the recipe and I found it to be just fine, not too salty and not over powering italian dressing taste. I passed this on to several friends and everyone has loved it.

Caribbean Chicken over Coconut Rice

I have tried many recipes from this website and each one has been wonderful, except this one. The rice is the reason I tried this recipe, but it ended up being nothing special. The chicken bouillon over powers the coconut taste, and the orange rind adds nothing to the flavor.
