Curried Mustard Greens with Kidney Beans

Smothered Collard Greens and Cabbage

So good! I omitted the bacon as I'm vegetarian and it was still banging. I have no idea what greens seasoning is, I just added some crushed red pepper. Delicious! I finished with a splash of apple cider vinegar.

Roasted Carrot and Cauliflower Curried Soup

Omg soooo good. I'm not sure if my ratios were off but I ended up adding an entire can of coconut milk. I also sautéed onions, then added the curry powder, vegetables and stock. So good! Restaurant quality for sure as another reviewer mentioned. Will make again and again!

Baingan Bharta (Eggplant Curry)

Love Love Love this! I made some slight changes which I think brought this recipe to the next level. First, I peeled, sliced and salted the eggplant and let it sit on some paper towels for about an hour to get some of the moisture out. I then sauteed the eggplant in some olive oil for about 5 minutes and set aside. Next I got going with steps 3 & 4. I upped the spices by a lot, I never measure spices so I'm not really sure by how much, but at least triple. I used a full 28 oz can of whole peeled tomatoes (I cut the tomatoes up first). Next I added the eggplant back in along with some Seitan I had sitting in the fridge that I needed to use up. Let is cook for probably 20-25 minutes. Served over rice. My hubby said it was one of the best meals I have ever cooked. Can't wait to eat the leftovers for lunch today!!

Rajma (Kidney Bean Curry)

So so so yummy! I don't have a pressure cooker so I started at step 4 using canned beans. Quick, easy and delicious weeknight meal! Didn't bother making a paste, just cut the onions, garlic, and ginger fine. Next time I will add more liquid, mine didn't have enough of a sauce. I'll also add more tomatoes next time, I only had one fresh tomato on hand so I used that plus 2 canned whole peeled plum tomatoes from the fridge.

Vegetarian Chili

Recipe was definitely easy to make. I sauteed the onions and 3 cloves of garlic (omitted the garlic powder) before adding the rest of the ingredients. It was good, but I felt that it was missing kick and flavor. Next time I will play with the spices.

Moroccan Lentil Soup

Wow, this was good! Did not have ground caradamon and didn't miss it. Used veg broth instead of water. Did not puree it. Oh, and I added some red pepper flakes for a little more heat. Will definitely make this again. Served with some crusty bread. MMMMMMM!

Thai Curry Tofu

This was pretty good! Added broccoli and carrots and red pepper flakes. Fried the tofu with some ginger. Didn't do the seasoned salt. Used light coconut milk to save some calories.

German Apple Cake I

Delicious! Used Granny Smith apples and followed recipe exactly. Have made 3 times in past 2 weeks - once for my husband and I and made 2 for a Oktoberfest party in my neighborhood. Everyone has asked for the recipe.

Chunky Tomato Potato Soup

Coconut Tofu Keema

I thought this was really tasty. Quick and easy too. I doubled the red pepper paste and it was extra spicy, just the way I like it! I used 2 C diced tomatoes and 1.5 C tomato sause as was suggested by another reviewer. Will definitely make this again.

Eggless Tofu Spinach Quiche

I thought this recipe was excellent. I did make a few changes though. I used a 14oz package of tofu, rinsed and patted dry. I used 2/3 cup soy milk and about 1 1/2 cups pepperjack cheese which gave it a nice kick. I added mushrooms, a little dry mustard and a little nutmeg. And finally, instead of the crust I used the mandolin to slice some sweet potatoes and made a 'crust' out of that. I probably used about 2 tbsp olive oil in the bottom of the pan to prevent sticking. I cooked it on the bottom rack at 400 for about 45 minutes until the sweet potatoes looked golden brown from the bottom. Yumminess!
