Kielbasa with Peppers and Potatoes

We loved this, especially with the sweet onion addition. As others suggested I sautéed the peppers and onion together, sautéed the kielbasa separately, as well as the potatoes. I was out of fresh potatoes so I browned 1/2 bag of diced hash browns. Worked perfectly. Combined all together, S&P, yum.

Balsamic Roasted Pork Loin

YUM!! Made exactly as written and wouldn't change a thing. Very, very moist and tender. I wouldn't roast any longer then 145. It was perfect, no pink inside although I would have preferred that.

Harvested Chicken Stew

Warm, comforting and healthy. I too sauteed the onion, celery carrots in olive oil. (Also added a chopped green pepper to the mix as I need to use it). Used 2 cans of undrained diced tomatoes, additional seasonings and loved it. Very forgiving recipe. I also used chicken from a rotissare.

Tomatillo Salsa Verde

Love this salsa~~but do not use 2 cups of water!! It makes Verde Soup. The liquid I do use is a little chicken broth, I think I might try another chef's review. Putting it all in the blender prior to the sauce pan, using less liquid. I used an immersion blender right in the pan and it worked wonderfully! Thanks for posting! This is delicious on just about anything!

Peachy Cuban Panini

Really liked the addition of apricot preserves. I do think having pickles and swiss on the top and the bottom was a little much. I used my George Foreman grill which did an OK job, but it kind of slipped apart. Just to experiment, I might try it on my waffel maker. Thanks!

Quick, healthy, low fat, and YUMMY!! I doubled the cumin & tumeric and added creole seasoning per other suggestions. Used pinto beans as I didn't have black. Will be making often, thanks for posting!

Easy Quiche

DH said it was good. I baked in a 9x13 for less time (per others reviews). Had some leftover garlic roasted broccoli I used mixed with some cooked frozen. I would recommend cooking the broccoli.

Spinach and Feta Pita Bake

Thanks Heatherbee! Loved it! I was looking for something to do with stale pita bread, what a find. (kudos all recipes, for having the ingredient look up!) I baked it for about 17 minutes. Unhappy with my grocery store, couldn't find any kind of pesto, so I used bruschetta tomato topping, & omitted the fresh tomato (since it was chunky). I think next time I will use thawed,well squeezed frozen spinach. It will be easier to "load" the stuff on top.

Crispy Orange Beef

Loved the flavor! I had a couple of foo-pahs though. My beef needed to be more tender. I don't normally fry, so I'm not sure if I'm not used to doing so with meat coated in corn starch or if I don't like it. Well definitely try again and mix corn starch with a little flour. Careful to not reduce the sauce too much. Thanks for posting BEC.

Marinated Tuna Steak

Great recipe! I let my tuna marinate for about 10 hours (DH way late from work) and the flavor was excellent. I grilled mine about 3 1/2 minutes per side as others had suggested, but I think my steaks were too thin as they were overcooked. Thanks.

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

Angel Chicken Pasta

Many reviews suggested doubling the sauce--I didn't, but I only used 2 lg. chicken breast halves. Per other reviews, I cut up the chicken in lg bite size pieces. I through it all in the crock pot on low for 3 hours. Great on penne pasta. Thanks for sharing!

Super. I did pound the chicken breasts out to allow more surface for the marinade to permeate. Served with Japanese vegetables from this site. Great meal.
