Crunchy No-Fry Chicken

I really liked the healthy alternative to this baked chicken recipe by using the chicken stock instead of eggs. I used turkey tenders (as that was what I had in the freezer) and made turkey fingers instead of the cutlets. The only suggestion I have is to flip the meat about half way through so it doesn't get soggy on the bottom.

Green Bean Stir-Fry

This is the best and I hate green beans. Made the recipe as stated and will probably make again tonite. Thank your for sharing!!! UPDATE: Last time I made these, I parboiled them for 1-2 minutes...dryed them off and stir fryed as directed. It seemed to speed up the stir fry time. Thanks again....delicious!

Brown Rice Veggie Stir-Fry

This was pretty good, just seemed to be missing something....needed a little oomph. I made two small changes in that I used cole slaw mix for convenience and toasted the almonds before sprinkling on at the end. This is great for a quick week-night meal. Thanks for sharing.

Country-Style Grilled Ribs

My hubby came home w/boneless pork ribs last week. After consulting with the Exchange, I decided to give this recipe a try. We weren't disappointed. Make exactly as directed and they came out tender and juicy. The sauce is excellent. Thank you for sharing!

Doughnut Bread Pudding

This was actually pretty good. I don't care much for the "soggy" bread in bread pudding, but I didn't mind the donuts for some reason. I used plain cake donuts, eliminated the almond extract which I did not have and I used Craisins instead of raisins. I combined it all before I left for work and baked it when I got home. This really would have been great with a scoop of vanilla ice cream!! Thanks for sharing!

Mojito Fruit Salad

Absolutely wonderful! I did use my own mix of fruit - peaches, casaba melon, strawberries, blueberries - but that's the beauty of fruit salad, use what you like. I added an additional teaspoon of sugar, but it probably wasn't necessary. Took it to a tailgate party for after the game and it was devoured. Everyone complimented on the refreshing mint. Thank you so much for sharing - this will be made over and over again.

Mozzarella Basil Bread

This is a great recipe, but I caution that the flour to liquid ratio listed is off. I ended up using six cups of flour to mix and another half cup while I was kneeding to get to the right consistency. I put all ingedients except the mozzarella and basil into my bread machine and processed on the dough cycle. During the final mix I added the cheese and basil (fresh from the garden). I upped the cheese to almost two cups, but for some reason didn't up the total amount of basil used - I should have. I was a little leary of the baking temperature, but it was fine. I tented after about 10 minutes to keep the tops from getting too dark. This bread has a delicious flavor and I will be making again. Thanks so much for sharing!

Can't Tell They're Low-fat Brownies

Made exactly as directed except I could only find 5 oz jars of baby food prunes, so I added the whole container. I didn't tell the fam what the secret ingredient was, just that they were low fat. Hubby knew something was different, but didn't complain when I told him about the prunes. My 6 year old couldn't stop raving about them even when she found out. In fact, she was asking me to make another batch this week. Hubby and I agreed that there is def a prune-y taste, but that seems to mellow over time. This is a great alternative to the high-fat original, but they do NOT taste exactly like the original. If you keep that in mind, you won't have a prob with these brownies. Thanks for the recipe - I will be making this often.

Amazing Whole Wheat Pizza Crust

I have made this several times now and the family just loves it. I did make a few changes for ease and healthiness. First I use all whole wheat flour and 5 tsp of vital wheat gluten. I also dump all ingred into my bread maker and process on the dough cycle. When finished, I divide the dough into two pieces and kneed a few times before putting into greased bowls. I cover and let rise about 30 minutes or so before rolling out. Thanks for sharing this amazing recipe!

Tomato Bread

I was looking for a recipe to use a multitude of home-grown tomatoes. When I realized I had tomato juice that needed using too, I couldn't resist. I followed naples' bread machine directions and baked in the oven. The whole house smelled wonderful! I especially enjoyed this bread toasted with a smidge of cream cheese. Thank you for sharing, I'll be making this again!

Cream Cheese Frosting II

I took the advice of another reviewer and adjusted the ingred as follows: 8 oz cream cheese, 1/4 c butter, 1 t vanilla, 1.5 c powdered sugar. Frosted a 9x13 carrot cake perfectly. Tasted wonderful. Thanks for sharing!

Asparagus Avocado Medley

Very good way to get some of my favorite veggies in one meal. I did roast my asparagus, and sauteed all the other veggies except the avocado and tomato. Personal preference, I just don't like raw veggies. I halved the thyme in the dressing as I don't care for that spice. It was a very good combo that I will make again. Thanks for sharing!

Homestyle Stuffed Peppers

Fantastic. My 10 year old dd not only requests these, but has proclaimed them to be on her top 5 faves of all time food list. I make them as directed, although sometimes I use a little less ground beef and a little more rice - depending on what I have. Thanks Jillian for a wonderful recipe!!

Cheesy Chicken Meatballs

These were really good. One caution - 1 t of crushed red pepper flakes makes these pretty spicy if you have younger children (or a wimpy husband). My kids liked them, but did comment that they were too spicy, so I will reduce probably by half the next time. I also used two eggs, because I forgot that the submitter said to only use one. They were very goopy, even with lots more bread crumbs, but still tasty. I served over noodles and made a WW recipe for reduced calorie alfredo sauce. So yummy and will make again. Thanks for sharing Raquel!!!

Sour Cream Waffles

More like 4.5 stars really. I doubled the recipe and used a container of vanilla yogurt and subbed half whole wheat flour for all the ap. I got six waffles on my belgian waffle maker this way. I took a family poll of this recipe vs my normal go-to and this won hands down. DH really liked that they were nice and moist and didn't suck up all the syrup like my normal recipe. I think I've found a new go-to. Thank you for sharing!

Cinnamon Krisp

As written this recipe would not work. There is no way 9 cups of cereal are going to fit in an 8x8 pan. However, the additional ingredients do perk up a regular pan of rice krispie treats. I made my usual treat recipe (5 cups of cereal, 5 T butter, & one pkg of mini marshmallows). I added the cinnamon in with the marshmallows to make sure it incorporated through. I then added the cereal, almonds, and dried cherries (dd hates raisins) and pressed into an 9x13 pan. Very good flavor and a nice change of pace. Thank you for sharing.
