Cinnamon Streusel Orange Muffins

I made exactly as directed and added the zest of two oranges to the liquid mixture. Yummy! I did think that there was a little too much cinnamon flavor with the stuesel in the middle and on top. Next time, I'll cut back on the cinnamon a little. Great recipe...thanks for sharing.

Asian Noodles with Chicken

I made the sauce and chicken as directed, but used veggies I had on hand (red, yellow, & green peppers that needed used as well as mushrooms. I also stuck some broccoli in with the pasta at the end.) This was a very good meal. The spice was just right. The whole family loved it and I will be making it again. Thanks so much for sharing!

Creamy Chicken Rice Soup

Great soup. Couple of changes...I added 2 cups of diced chicken that needed to be used and wild rice because that was what I had on had. I really appreciate the changes made to give this recipe a healthier twist without losing flavor. I will make again and again as in addition to healthy the ingredients are pretty much staples in my house. Thanks for sharing!

Can't Tell They're Low-fat Brownies

Made exactly as directed except I could only find 5 oz jars of baby food prunes, so I added the whole container. I didn't tell the fam what the secret ingredient was, just that they were low fat. Hubby knew something was different, but didn't complain when I told him about the prunes. My 6 year old couldn't stop raving about them even when she found out. In fact, she was asking me to make another batch this week. Hubby and I agreed that there is def a prune-y taste, but that seems to mellow over time. This is a great alternative to the high-fat original, but they do NOT taste exactly like the original. If you keep that in mind, you won't have a prob with these brownies. Thanks for the recipe - I will be making this often.

Apple Spice Rice

I used brown rice as that was what I had. I followed the directions on the package as far as quantity of broth used. I put all ingred except apples and Craisins (dd doesn't like raisins) then added those about half way through the package-directed cooking time. This was an excellent side dish that the whole family liked and I will be making again. Thank you for sharing!!

Root Beer Pork Chops

This is a great way to prepare pork chops. The root beer gives it a sweet taste, but it's not overpowering - just right. Everyone from my 2 yr old ds to mom really enjoyed these. Thanks Ken for another great recipe!

Apple Cole Slaw

I really liked this cole slaw. I made a couple of changes based on what I had and another review. I subbed celery for the pepper and used a gala apple and a red delicious because that is what I had. I omitted the green onion because I didn't have any, but next time I make this it will be included to give the salad that extra little zip. Thanks for sharing this delcious alternative to the mayo-laden cole slaws.

Applesauce Bars

This is probably my dd's most requested dessert! The only change I make is to use 1/2 cup ap flour and 1/2 cup whole wheat flour. Otherwise I make as directed to rave reviews. I (and my dd) thank you for sharing.

Amazing Whole Wheat Pizza Crust

I have made this several times now and the family just loves it. I did make a few changes for ease and healthiness. First I use all whole wheat flour and 5 tsp of vital wheat gluten. I also dump all ingred into my bread maker and process on the dough cycle. When finished, I divide the dough into two pieces and kneed a few times before putting into greased bowls. I cover and let rise about 30 minutes or so before rolling out. Thanks for sharing this amazing recipe!

Soft Sandwich Buns

I've tried a couple of different roll recipies and this was my family's favorite. After the first time making, I did cut the sugar in half. I also subbed 2 cups of whole wheat flour for 2 of the ap flour. I also made 12 servings instead of the 18 listed. This makes the perfect sized hamburger rolls. This will be my go-to recipe for sandwhich and hot dog rolls. Thank you for sharing!

Slow Cooker Chicken Taco Soup

Very good and filling. I did make a couple of changes based on what I had. I used one large previously baked chicken breast, shredded and instead of the beer, I used 12 oz of the stock from "Simple Carnitas" from this site. Put all in the crock pot and simmered 2 hours on high. I don't even need the extras. And without the cheese, sour cream, and tortillas it is an extremely healthy soup. Thanks for sharing!

Actually Delicious Turkey Burgers

Simple Carnitas

Very good, very easy, very tasty. I put a bone-in roast in my crock pot, filled with ingredients as directed and it all fell apart at dinner time. Nice flavor; six year old DD could not stop raving about how good it is. Thank you for sharing Ken!

Pumpkin Crumb Cake

Made pretty much as directed except that I halved the white sugar in the recipe and subbed brown sugar for the crumble topping (also reduced to about 1/3 cup). My hubby, who does not care for pumpkin, said it was very good. There were enough flavors going on that he didn't just taste pumpkin. DD loved her "pumpkin pie cake." Thanks for sharing a recipe that the whole family could agree on!

Ham Broccoli Braid

I've been using this recipe to take care of leftover ham for years. I did change things up a little when I made it last night. I sauteed the onion for a few minutes before adding, added the juice from half of a lemon, and used Dijonaise instead of the dijon mustard. The Dijonaise is creamier and took the bite out of the regular mustard. Very good. Thanks for sharing.

Sweet N Sour Meatballs

I made my own meatballs to add to this fabulous sauce. Only other change I made was to use half red pepper and half green. I served over rice for dinner and served the leftovers in crusty sub rolls. A nice change from the same old tomato sauce meatballs. Thanks for sharing.

I usually like to make my cc cookies w/chunky peanut butter and walnuts. DH wanted just chocolate chip cookies. These have been recommended a lot on the exchange, so I gave it a try and I was not disappointed. The only change I made was to sub half whole wheat flour for the ap.
