Baked Teriyaki Chicken

Reviewed: May 23, 2011
I used the sauce to make teriyaki turkey tenderloins. Instead of baking, I took advantage of the nice day and grilled the meat instead, basting with every turn. Very good sauce that the whole family liked. Thank you for sharing.

Sugar Snap Peas with Mint

Reviewed: May 16, 2011
I made this exactly as directed and my family and I thought that the snap peas were too crisp. Next time I make, I will parboil for a few minutes before stir frying. The snap peas had a good flavor and I thought the mint really added that special something. Thank you for sharing this great recipe!

Mexican-Style Goulash

Reviewed: May 13, 2011
When the dd goes back for seconds you know you have a winner! I made as directed except I used two heaping tbsp of taco seasoning (Taco Seasoning I from this site) instead of the spices listed. I also used the remnants from several different shaped pastas so I adjusted my cooking time accordingly. Great recipe, thanks for sharing!

Chicken Enchiladas I

Reviewed: May 13, 2011
I think I found a new family favorite! I made a couple of changes based on what I had and another review. I sauteed the pepper along with the onion and I only had 8 oz of tomato sauce so I omitted the water. It still resulted in a lot of liquid as other reviewers have indicated. So instead of using taco sauce, I poured the remaining sauce over top and baked. These were very good. Will prob add to the rotation to use with leftover roast chicken. Thanks for sharing!

I make this every now and then and it's a family favorite that doesn't last long around my house. I make as directed omitting the nuts and raisins due to family preferences. Thanks for sharing!

Rice Balls a la Tim

Reviewed: Mar. 2, 2011
Awesome! I made a couple of changes based on nutrition/what I had in my cupboards, but nothing that comprimised the integrity of the recipe. I used brown rice, whole wheat bread crumbs mixed with a little bit of toasted wheat germ, egg whites, and reduced fat/fat free cheeses. Very impressive meal that got good reviews from the whole family. Even my two-year-old rice-hating ds was shoveling it in. Thank you so much for sharing a recipe that will be made often in my house!

Three-Cheese Spaghetti Bake

Reviewed: Oct. 18, 2010
Very good recipe. I made as directed, but cubed some velveeta and put it on top of the noodles before adding the sauce. I also used homemade spaghetti sauce that I applied liberally to the top so it wouldn't dry out as others have suggested. With the addition of the velveeta, this dish was over-the-top delicious. Just the right amount of garlic and seasonings. I will be making this dish often for our special family gatherings. Thank you so much for sharing!

Onesy-Twosy Cookies

Reviewed: Oct. 18, 2010
The best pb cookies I have ever made! I did use butter in place of shortening and did not add peanuts as the recipe called for. Everyone who managed to sneak one past me loved them. Thanks so much for sharing - I will be making these often!

Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Sep. 14, 2010
This is a very good, basic recipe for frosting. I made it as directed only I subbed almond extract for the vanilla. Tasted even better the next day when the flavors had a chance to meld. Thank you for sharing what will be my standard go-to frosting recipe.

Sweet Vanilla Cupcakes

Reviewed: Sep. 14, 2010
Oh, yummy! I first made these as cupcakes for my dd's birthday last month. I dyed the batter various colors to make rainbow cupcakes. They were scrumptious. So when the fam requested me to make "a cake with frosting" for dessert, I decided to use this recipe again. I doubled everything and put in a wax paper lined 9x13 baking pan. I baked for 32 minutes (but use caution, my oven runs a little hot) to perfection. DD was eating some last night proclaiming that this is THE BEST vanilla cake ever. Thanks for sharing Marianne!

Clone of a Cinnabon

Reviewed: Sep. 7, 2010
I've been resisting this recipe because I figured it was too much work/too hard/too time consuming. Boy was I wrong. I threw all the ingredients into my bread machine (subbing half whole wheat flour), turned it out and made my rolls. After putting into the sprayed pan, I covered with a towel and put them in the frige overnite. In the morning, I put them on the counter while the oven was preheating. OH SO GOOD. Totally impressed the hubby with this one. Thank you for sharing, I'm sure these will be requested often.

House Fried Rice

Reviewed: Aug. 10, 2010
This is the first fried rice recipe I made that my dd ate without complaining. Even my 2 yr old ds ate his. I changed up the veggies based on what I had (mushrooms for peppers, white & green onion) but didn't compromise the recipe. Thank you for sharing what will be made often at my house!

Spinach Lentil Soup

Reviewed: Jul. 26, 2010
This soup is not only great for your waistline, but also your wallet! I have also made using frozen (defrosted and drained of liquid) spinach with good results. I have never been a big fan of lentil soup, but this easy recipe will be made time and time again. Thanks so much for sharing!

Summer Squash Bread

Reviewed: Jul. 26, 2010
Made this over the weekend to use up an abundance of gifted summer squash. I reduced the sugar to 1.5 cups and did half applesauce, half canola oil. I also used half whole wheat and half ap flour....just a couple of healthier changes. I thought the nutmeg flavor was a little strong, but I'm not a big nutmeg fan. Hubby and kids both loved the bread, so I made again in muffin tins for dd to pack with school lunches in the fall (just froze the finished product). Thank you for sharing a great baked option to use up summer squash.

Muffin Frittatas

Reviewed: Jul. 14, 2010
I used 1.5 cups of South Western Egg Beaters in place of the six eggs. This is a great way to hide some veggies, as dd didn't even inquire about the zucchini! I made a double batch and froze the leftovers for quick breakfasts. Thank you for sharing!

Soft Giant Pretzels

Awesome. Only real change I made was to use half ap flour and half whole wheat. Instead of topping with salt, I sprinkled cinnamon sugar on the top. Impressed myself and the fam with this one! Thanks for sharing.
