Chicken Pepper Steak

Based on a few reviews, I made a couple of changes. I cut the chicken into bite size pieces to speed the cooking process and make it easier for my kiddos to eat. I also used 2.5 cups of chicken broth instead of water. The receipe is good, just needs to be seasoned a little more for my family's tastes. Really a nice little recipe - thanks for sharing!

Pumpkin Zucchini Bread

I halved this recipe and made into muffins. I used applesauce in place of the butter, pumpkin pie spice in place of the individual spices, and white chocolate chips instead of walnuts (which I did not have). Great combo of flavors the whole family - including the finicky dh - loved. Thanks for sharing!!!

Tuna-Stuffed Tomatoes

Just wanted to say that I LOVE this tuna salad recipe. I love the combo of mayo, dijon, and seasoned salt. I've made this in the tomatoes as directed and also used the tuna salad in a wrap. Thanks for sharing - I'll be making this often.

E-Z Drop Biscuits

I am lazy and hate the thought of rolling and cutting regular biscuits. This recipe works perfect for me! Great tasting with butter, jam, or honey. My 3 yr old requested these to go with stew the other night. I did omit the tartar as others recommended. They are perfect - thanks for sharing!!!

Mom's Buttermilk Cookies

While I actually prefer simple drop cookies when baking ('cuz I'm lazy like that), I have to say I am more than willing to go the extra step with these cookies. They are absolutely delicious. The only change I made was to use buttermilk instead of regular milk in the frosting. I also sprinkled Christmas jimmies on top. These were the first cookies gone from the multitude that I made this season. Thanks for the recipe!!!!

Cheesy Chicken Meatballs

These were really good. One caution - 1 t of crushed red pepper flakes makes these pretty spicy if you have younger children (or a wimpy husband). My kids liked them, but did comment that they were too spicy, so I will reduce probably by half the next time. I also used two eggs, because I forgot that the submitter said to only use one. They were very goopy, even with lots more bread crumbs, but still tasty. I served over noodles and made a WW recipe for reduced calorie alfredo sauce. So yummy and will make again. Thanks for sharing Raquel!!!

Jamie's Minestrone

I kind of played with the veggies based on what I had, but remained true to the rest of the recipe. One thing I did was to use a box of frozen spinach (defrosted and squeezed of liquid) instead of the fresh. I made and froze (minus the pasta) to take on a family vacation. My dad and FIL ate almost half of it themselves - and neither one likes spinach! With great response from finicky eaters, this recipe couldn't be rated lower than a 5. Thanks so much for sharing - I will make this often.

Chocolate Cupcakes

This is a great basic chocolate cupcake recipe. I agree with other posters, however, that the directions and serving size is a little off. As another suggested, I melted the butter and added with the wet ingredients. Using a hand mixer, I beat everything for two minutes (like the directions for a boxed cake). I was able to get 24 perfect sized cupcakes from this recipe, instead of 16 as is stated. But the overall taste is good and this will probably be my go-to chocolate cupcake recipe. Lime-Tarragon Grilled Chicken

Asian Stir Fry Sauce

More like 4.5 stars really. One of my favorite recipes from this site is "Asian Noodles with Chicken" but the stir fry sauce can be expensive, so I thought I'd give this a try since most of the ingredients are staples at my house. I did reduce the corn syrup to 1/4 cup and probably only used 1.5 T of corn starch because I didn't want it to be too thick for the recipe I was using it in. This worked really well and in fact I couldn't tell the difference between the bottled brand I normally buy and what I made. Thanks so much - I will be making this often.

Sour Cream Waffles

More like 4.5 stars really. I doubled the recipe and used a container of vanilla yogurt and subbed half whole wheat flour for all the ap. I got six waffles on my belgian waffle maker this way. I took a family poll of this recipe vs my normal go-to and this won hands down. DH really liked that they were nice and moist and didn't suck up all the syrup like my normal recipe. I think I've found a new go-to. Thank you for sharing!

Mojito Fruit Salad

Absolutely wonderful! I did use my own mix of fruit - peaches, casaba melon, strawberries, blueberries - but that's the beauty of fruit salad, use what you like. I added an additional teaspoon of sugar, but it probably wasn't necessary. Took it to a tailgate party for after the game and it was devoured. Everyone complimented on the refreshing mint. Thank you so much for sharing - this will be made over and over again.

Grilled Potatoes and Onion

This is a great way to make potatoes during the summer when you don't want to turn on the oven. The simple ingredients are staples, but you could also add additional spices to pair up with whatever main course you are serving (I usually add fresh chives, but dill would be over the top wonderful here). Thank you for sharing - this will be made again and again!

Mozzarella Basil Bread

This is a great recipe, but I caution that the flour to liquid ratio listed is off. I ended up using six cups of flour to mix and another half cup while I was kneeding to get to the right consistency. I put all ingedients except the mozzarella and basil into my bread machine and processed on the dough cycle. During the final mix I added the cheese and basil (fresh from the garden). I upped the cheese to almost two cups, but for some reason didn't up the total amount of basil used - I should have. I was a little leary of the baking temperature, but it was fine. I tented after about 10 minutes to keep the tops from getting too dark. This bread has a delicious flavor and I will be making again. Thanks so much for sharing!

Ten Minute Szechuan Chicken

Made this as directed without the cayenne as I had young children eating. Without the cayenne, it needed a little something to perk it up (black/red pepper maybe?) but that was all on me. Hubby really liked it so I'm sure this will be made again and again on the nights I'm craving takeout. Thank you for sharing!

Cinnamon Krisp

As written this recipe would not work. There is no way 9 cups of cereal are going to fit in an 8x8 pan. However, the additional ingredients do perk up a regular pan of rice krispie treats. I made my usual treat recipe (5 cups of cereal, 5 T butter, & one pkg of mini marshmallows). I added the cinnamon in with the marshmallows to make sure it incorporated through. I then added the cereal, almonds, and dried cherries (dd hates raisins) and pressed into an 9x13 pan. Very good flavor and a nice change of pace. Thank you for sharing.

Slow Cooker Chicken Cacciatore

I made as directed and served over noodles. Good recipe, although next time I will use homemade spaghetti sauce (personal pref). I liked that all the ingredients are staples in my house. Thank you for sharing what will be made often.

Mound Bars

I halved the recipe and baked in an 8x8 square pan. When putting the coconut mixture on the graham cracker crust, I sprayed a frosting knife with non-stick spray and then patted it until it spread across. This is a very good, very rich, dessert that satisfied my coconut craving. Thank you for sharing!

Baked Teriyaki Chicken

I used the sauce to make teriyaki turkey tenderloins. Instead of baking, I took advantage of the nice day and grilled the meat instead, basting with every turn. Very good sauce that the whole family liked. Thank you for sharing.

Sugar Snap Peas with Mint

I made this exactly as directed and my family and I thought that the snap peas were too crisp. Next time I make, I will parboil for a few minutes before stir frying. The snap peas had a good flavor and I thought the mint really added that special something. Thank you for sharing this great recipe!
