I am currently working two full time jobs - a mom of two great kids and a payroll administrator for a local auto dealership. Something's always going on at my house (www.dingerfamilyzoo.blogspot.com) so it can be hectic trying to get quick, but healthy meals on the table.
My favorite things to cook
Although growing up I was the devout "baker" of the family, having a husband and kids has made me come to terms with my inner chef. I enjoy making pasta dishes and experimenting with new marinades. I practically grill all year 'round and have even become better than my husband (IMHO). Although I must admit, I still make a pretty mean carrot cake.
My favorite family cooking traditions
I still remember my grandmother's house on Christmas Eve. We would have fish and pasta and many, many desserts. I still replicate some of this tradition today with my mom, although scaled down from what grandma did. I'm beginning a tradition with my daughter of making Jesus a birthday cake every Christmas. We do it from scratch together, right down to licking the bowl.
My cooking triumphs
Through the adventures of others on this site I have actually managed to frost a cupcake. Although that sounds trivial, I must admit that icing and I do not get along. I am going to keep trying.
My cooking tragedies
My first Christmas dinner! My mom told me to put the turkey in the oven on a low temp and let it roast all night. I checked on it at 1:30 am and it was completely, fall-off-the-bone done. About an hour and a half later, fire trucks came roaring through our apartment complex. I got myself together, managed to salvage the turkey, and dropped a whole bowl of corn on the floor while setting the table.

E-Z Drop Biscuits
I am lazy and hate the thought of rolling and cutting regular biscuits. This recipe works perfect for me! Great tasting with butter, jam, or honey. My 3 yr old requested these to go with stew the other night. I did omit the tartar as others recommended. They are perfect - thanks for sharing!!!

Mom's Buttermilk Cookies
While I actually prefer simple drop cookies when baking ('cuz I'm lazy like that), I have to say I am more than willing to go the extra step with these cookies. They are absolutely delicious. The only change I made was to use buttermilk instead of regular milk in the frosting. I also sprinkled Christmas jimmies on top. These were the first cookies gone from the multitude that I made this season. Thanks for the recipe!!!!

Cheesy Chicken Meatballs
These were really good. One caution - 1 t of crushed red pepper flakes makes these pretty spicy if you have younger children (or a wimpy husband). My kids liked them, but did comment that they were too spicy, so I will reduce probably by half the next time. I also used two eggs, because I forgot that the submitter said to only use one. They were very goopy, even with lots more bread crumbs, but still tasty. I served over noodles and made a WW recipe for reduced calorie alfredo sauce. So yummy and will make again. Thanks for sharing Raquel!!!
