Cinnamon Streusel Orange Muffins

Yummy muffins but other reviewers were right about the lack of orange taste. I'll try adding orange zest to the batter next time. NOTE: Be careful not to fill past half the muffin cup the first time, otherwise you'll end up with not enough batter to top the cinnamon layer. The recipe says half and it means it! Haha.

Fluffy Pancakes

WONDERFUL! I'm going to try unsalted butter next time or lower the salt a bit. It was a little to salty for me. But other than that... WOW! I used Splenda Blend and that's sweeter than regular sugar. Yum. Try it!

Debdoozie's Blue Ribbon Chili

WOW! The best I've every made! I ONLY changed 3 small things: when I sauteed the meat in the onion, I included the garlic salt; used one can of beans because my husband doesn't like too many; drained the beans but added about a 1/2 c of water. Those are just little tweaks. This is a phenomenal recipe!!!! It's a keeper! I may even try it in a chili cookoff!

Slow Cooker Beef Roast

WONDERFUL idea - bbq sauce & Worcestershire! I did follow other reviewers suggestion of cooking the veges separately. Mashed tators go great with this. The flavors are not overwhelming; you can taste the beef which my hubby likes. I didn't use the celery or onions. I put garlic powder & pepper on the beef, then browned both sides in olive oil before I put it in the slow cooker. Smelled great and tasted great. If you want MORE flavor, add more spices/sauces. Sweet Baby Rays original sauce is the BEST!

Baked Salmon II

WONDERFUL! I followed the advice of one reviewer & a few changes. 3T olive oil, 3/4 basil, 1/2 tsp salt, 1/2 tsp pepper, 2T lemon juice, 1 tsp parsley. I used 3 fillets too. Taking the skin off after cooking is a great idea. Covering the whole dish with foil works well. I cooked it for 30 minutes. I also used dried minced garlic (1/2 tsp). Also, I spooned some of the "juice" onto the fish after cooking. The combo of flavors are wonderful! What a smell! A winner we'll have again!

Manuela's Fish Cakes

The cook times took a little longer for me, maybe due to the type of potato or thickness of fish. To help the messiness, after forming the patty, I used a spatula to carry & flip the patties in the egg & bread crumbs. I added a few crumbs to the mix, but the patties were still messy, though I didn't mind. All in all, the patties came out great tasting! I'll try different potatoes & different seasoned crumbs next time for a different flavor. Maybe I'll try a different fish too. I used Italian crumbs & red potatoes this time around. I didn't have any halibut, so I used extra salmon.

Parsley Red Potatoes

WONDERFUL! I tried olive oil & cut the potatoes in wedges (because my potatoes were bigger) & put chicken bouillon in the water. My hubby LOVED them. I didn't put all the salt in because of the bouillon but next time - less bouillon, more sea salt. Maybe I'll try the butter too.

I agree with the other reviews, use only half the spices. It's still pretty spicy. I put butter in the pan & covered it with foil the whole time. WONDERFUL, juiciness.

Pan Seared Lemon Tilapia with Parmesan Pasta

I left out the lemon juice because I didn't have it. Left out the macaroni too. Lightly brushed the fish with olive out to make the seasonings stick. Used Italian seasoning instead of basil because I didn't have that. Was GREAT! I'm not a fan of lemon on chicken or fish. My hubby liked it crisper than the picture shows.

White Chili I

WONDERFUL! I "combined" the suggestions of the first 5 reviewers. I doubled the beans, nearly doubled the spices (abt 1/2 more on each), didn't drain the beans, added beans abt 5 minutes before time to eat. I did had 1/4 cup more broth but that's because after simmering, I let the soup sit for about 45 minutes to really get that spice into the chicken. WOW! I was SO amazed just how good it turned out! I would say if you like really spicey, add more spice. I cut the chicken into little cubes. There's enough soup for at least 7 bowlfuls especially with the extra beans. I would think 1 1/2 cans would be plenty. Next time, I will drain the beans & add extra broth & some flour or cornstarch. See what happens. YUMMMMMMY!!!!!!!!!!!!!!

The beef marinade is AMAZING! We didn't like the tomatoes on it. The second time I put fewer onions & no mushrooms. I liked the mushrooms so back they go! Put the tomatoes in the salad.

Mmm-Mmm Better Brownies

A HIT! We did use melted butter instead of vegetable oil. It was great. Perfect! Not too mushy, not too cakey. We used chocolate chips instead of nuts. Not everyone in my family likes nuts. WONDERFUL!

Taco Seasoning I

WOW! WONDERFUL! I used 2 tbsp of this mix with 1 lb of ground beef. I added two things: nearly 2/3 cup of water and 1 1/2 tsp of flour after I drained the meat, then let it boil a bit. I won't go use a packet of mix with MSG in it; I'll use this.
