Pesto Polenta Lasagna

The polenta is a great alternative to lasagna. I added onion, mushrooms and sun-dried tomatoes to give some extra flavor. It was delicious!

Quinoa Chard Pilaf

This dish is simple and delicious! I didn't have swiss chard, so I used spinach and it fit just fine. Either if these greens would give great flavor. I will make this one again!

I liked this recipe! It was easy to make although I made a few changes. I only used one leek and I had to use 3 eggs to make the ingredients stick together. It was difficult to roll the mix into sausage shapes, so instead I made patties. I would make this recipe again!
