Oven Fried Chicken II

I was looking for another chicken recipe and made this with all drumsticks. I took someone's advice and added lemon pepper to the bread crumb coating! I cooked for 20 minutes and turned over for another 20 minutes. Also, used Pam versus vegetable oil. The meat was perfectly tender and juicy. This is definitely going on the dinner menu rotation!

Strawberry Angel Food Dessert

I needed a quick and easy recipe for a last minute block party. This was a HIT! The two changes I made was only using a couple of tablespoons of strawberry preservatives and adding blueberries to the mix. If you use a whole jar of preservatives, it would have ruined it. I suggest getting either 2 rounds of 10 inch angel food cake OR a whole container of the pre-sliced angel food cake. I felt it wasn't enough cake. Otherwise, this is a keeper and will plan to use it more often.

Quick and Easy Green Chile Chicken Enchilada Casserole

Awesome recipe! To save cooking time, I mixed 2 large cans of Snow's canned diced chicken breast and mixed it with a couple dollops of sour cream, 1/4 cup of shredded cheese, a splash of the green chile sauce, and about a teaspoon of garlic salt. I didn't have corn tortillas on hand and used flour instead. I rolled them like normal enchiladas with seam-side down, side by side, in a 9x13 casserole dish. I poured the remaining sauce and topped with remaining cheese. Baked for about 30 minutes at 350 degrees. I will continue to make this dish and freeze ahead of time as my hands will be tied with a new baby on the way. In about an hour, you really have a yummy quick and easy green chile chicken enchilada casserole!!

Banana Bread Cookies

I made these at a bake sale and they went fast! Only change I did was add one more banana and dusted them with powdered sugar. Fantastic and easy recipe!

White Chili with Chicken

This is a great alternative to the traditional beef chili recipe. I entered this in my company chili cook-off and won most creative chili! The only change I made to the recipe is using canned white breasts instead. The chicken was extremely tender and it cut the cooking time in half.

Split Pea Soup

This is my new favorite soup to make. I couldn't find the bone-in ham at the grocery store, so I substituted it for bone-in ham steak. It turned out better than expected. I'll never buy the canned soup again!

Clam Chowder III

This recipe is a hit!! My friends and family are always craving for me to make this. Instead of using flour and butter to thicken up the soup, I've mixed cornstarch and water. You can't tell the difference.
