I've made this cake 3 times--once as written, once making the cake with 1/3 c oil, 1 cup water and 2 TBS. poppy seeds (I always use Duncan Hines cake mixes), replaced canned lemon pie filling with 1 large (cook kind) lemon pudding mix and the same frosting and once with a Yellow Cake mix, instant lemon pudding, 1/3 c oil, 1 cup water and 2 TBS. poppy seeds, replaced canned lemon pie filling with 1 large (cook kind) lemon pudding mix and the same frosting. They're all great (and easy). I'll continue to use less oil, water and poppy seeds and replace the the canned pie filling with 1 large Jello Brand Lemon (cook kind) Pudding Mix and use the same frosting mix. Great recipe!

Spicy Apple Cake

Needed a quick dessert for some friends who decided to bring a pot luck dinner at the last minute. Quick, easy and delicious! Not a crumb left. Made exactly as written, using butter as the shortening and just a pinch of nutmeg since I don't care for it.

Simple Baked Apples

I made this for brunch and it was great! I used 2 Granny Smith, 2 Braeburn and 2 Honeycrisp apples and craisins instead of raisins. I'll be making this again...and soon!

Caramel Bars

After reading all the reviews about what to change on the oatmeal mixture for these bars I decided to double it, but only use 1 cup of butter. I used half the mixture on the bottom, but held back about 2/3 cup on the top. I had my 7 grandkids, ages 3 to 13, helping me bake for the weekend. They all thought I should make about 10 of these to take to the Labor Day Party we're going to. In their words--these bars rock! They also talked me into baking the extra oatmeal crust mixture until it was crunchy and melting the extra caramels with a little milk, so they could have that combination on top of some vanilla ice cream. I did. It was great.

White Chocolate Raspberry Cheesecake

Baked this over a waterbath and let it cool in the oven. It fell a little, cracked a little, but no one cared. Served it with extra sauce, fresh raspberries and whipped cream. I've created a monster--now my family wants this at every family get together.
