Cinnamon-Peach Cottage Cheese Pancakes

Excellent! I have made this 3 times in thhe last 2 weeks. I added 1/4 c. ground flax for extra benefit. The kiddies love these and syrup is not required. No mess! These are very moist and great reheated as well. I did try this once with frozen blueberries and that worked as well but fresh peach is best. I will try other frozen fruit as the seasons change. Update - I've now made this at least a dozen time's and wanted to add that shredded apple is a VERY close 2nd substitution for fresh in-season peach. A little sprinkle pf cinnamon-sugar and you have a great start to your morning.

Fabulous Fried Cabbage

Baked Ziti III

**Update** - I made this for a second time and used a 15oz carton of ricotta cheese for the sour cream, again mixed in with the pasta. Used ground turkey and added 1 t. each, italian herb and salt. Deelish!! prefer the ricotta, for sure. My husband would like me to add capers and red pepper flakes next time, but as I said before, the kids LOVE it the simple way. This was a great and easy meal. My kids (3 and 18 months)devoured their dinner - I should give 5 stars for that. I used macaroni and coated the pasta with sour cream as recommended. I used a 12oz package of shredded cheese combo from Trader Joe's and dried basil for fresh. I will make again.

Super Easy Salmon Cakes

Easy and quick. I added lemon and zest instead of lemon pepper per another review. I didn't have green onions, so I minced some scallions. I doubled the recipe, but only made 2/3's of Saltines and still had extra saltine crumbs left over. Not sure if I cooked them too long, but they were dry. I will try these again.

Shrimp and Crab Enchiladas

This was good and easy. I sauteed the shrimp with a leek in olive oil. I only had room and filling for 8 nice size enchiladas and I made 1/2 with corn tortillas and the other 1/2 with flour tortillas. I preferred the flavor of the corn. I also used salsa verde from Trader Joe's and it gave the dish a nice flavor. I will make this again.

Rempel Family Meatloaf

I read all of the suggestions, but decided to make the original recipe to establish a baseline. It is excellent as is, and the only addition for the next time, will be to add pepper.
