Wow. I was aprehensive about a mayo based dressing, then realized mayo was an emulsion of egg and oil, the 'missing' ingredients in this recipe. This tastes like the high end restaurants where they make the salad tableside. Yeah, that good!. I threw all of the ingredients into a small food processor without mincing and it all came together in a few minutes. I also liked that I didn't have to use a raw egg. I did not make the croutons so I can't comment on those, but this is my new 'go-to' caesar salad dressing. Thank you.
