Guacamole

I have made this at least 20 x's and always get rave reviews for this appetizer. The only changes that have evolved for me in this recipe are dropping the tomatoes because they make the guac a little runny and substitute 1/4 t. cumin for the garlic. Fantastic recipe!!

Vegan Basil Tomato Soup

Great Base to start for a super simple delicious soup! I only used 2 cans (14.5 oz) of diced tomatoes and kept all of the rest of the measurements the same. Once the tomatoes were simmered, I used an immersion blender for a smoother soup. I turned it Vegan by using unsweetened almond milk, vegable broth and omitting the butter. I did add salt and pepper to taste. Low cal and no additives!

Basil Tomato Soup

Microwave Lemon Curd

OMG. Delicious and Easy! The sugar/lemon ratio was perfect. Sweet, but not too sweet. I use it in plain yogurt, on toast and crackers with cream cheese. I was very impressed and will be making again and again.

Grandma Minnie's Old Fashioned Sugar Cookies

I tried 3 other recipes on this site in search for the perfect cutout recipe. I need to search no further, this is it! I believe the reason is the way the butter is blended into the dry ingredients. My cookies were crisp and flavorful. Thank you.

Burnt Butter Frosting

Easy AND delicious! I cut the recipe in half for 20 cupcakes and I still have some leftover. The frosting does set quickly so you have to move fast. My butter turned tan and continued to darken after I removed from heat so have all of the ingredients ready to mix.

Tomato and Mozzarella Bites

I doubled the recipe to take to a party and it disappeared in minutes! I used Trader Joes marinated mini mozzerella balls and drizzled the marinade over the finished product. The toothpicks were too small and squished the tomato and cheese so I used a small skewer (5-6") and that gave ample room to grab the app without getting fingers greasy. Great presentation and wonderful taste!

Cheesy Broccoli Pie

what a perfect "pantry" meal. Very light, great on a warm evening with a salad. Made as written and very good. Can see the opportunity to tailor with other ingredients in the fridge - ham, scallions, mushroms etc. A keeper!

Best Spinach Dip Ever

Deelish! I added the whole box of spinach and was really impressed with how easy this was. I used light mayo and light sour cream to cut down on a few calories. Great presentation in the bread round. A new addition to the entertaining menu!

Caesar Salad Supreme

Wow. I was aprehensive about a mayo based dressing, then realized mayo was an emulsion of egg and oil, the 'missing' ingredients in this recipe. This tastes like the high end restaurants where they make the salad tableside. Yeah, that good!. I threw all of the ingredients into a small food processor without mincing and it all came together in a few minutes. I also liked that I didn't have to use a raw egg. I did not make the croutons so I can't comment on those, but this is my new 'go-to' caesar salad dressing. Thank you.

Greek Lemon Chicken Soup

5 stars for an excellent base! With a few tweeks, this has a permanent place in the weekly rotation. I add 1-2 t. greek seasoning (from McCormick) with the first simmer. No celery for me (personal preference) and double the carrots and onion. Chicken soup base varies, and I only need 3T. for flavor. Sub butter for margarine. I also use 5 egg yolks and 2+ cups of rice.

Fluffy French Toast

Brazilian Fish Stew

Wow! Quick, easy and flavorful. The spice marinade for the fish was very good and flavored the whole dish. I am not a fan of bell peppers so I added 1 yellow pepper for color and a zucchini for added vegetable. I think adding shrimp will round it out a bit more. Thank you, I will make again.

Creamy Rice Pudding

Very quick and easy stovetop recipe. Great for leftover rice. I decreased the sugar to 1/4 cup, use skim milk and have added cinnamon and nutmeg on some occasions, but it is only about preference. This recipe is superb on its own. One last thing, like other reviewers, I beat the egg with the last 1/2 cup milk and add a spoon of rice mixture to milk before SLOWLY adding it to the pudding.

Barm Brack

The smell and taste are 5 stars. The consistency leaves something to be desired. I followed the recipe exactly up to the pan. I didn't have an 8-inch round and placed it in a 9x5 glass loaf pan. I left it in the oven 1hour45min, checking it every 15 min. after the 45 minute mark. The pan size is probably the key as the dough is very wet and the raisin/lemons sink to the bottom. My end result was disastrous - very dark/bitter almost burnt outside and still too moist on the inside. I would make it again but I have to figure out where I went wrong. PS. I used the candied lemon recipe from this site - excellent and really added a wonderful flavor to this loaf

Candied Lemon Peel

Perfect! I peeled the skin with a vegetable peeler. I used 4 small lemons (could have used 5 or 6 with just the peelings). No pith to peel. Not bitter at all. I boiled the lemons just once for 5 minutes. The key for me was the second boil in the sugar water. The directions state to boil until 'transparent'. This took about 20-30 minutes and the end result was evident as I tasted the lemon at the 10 minute boil mark and it definitely was not ready. The lemon peel was sticky so I dipped it in sugar and that made it easier to chop.

Brazilian Lemonade

Gosh, I was really looking forward to trying this beverage. But....It was really tart! I used the VitiMix which pretty much mulches everything. No straining needed but also means that I had super intense flavors. I actually had to add additional sugar and I like tart!? I will definately make this again and play around with the lime peel to juice ratio. Good refreshing recipe, just be careful if you use a vitamix.

Icy Blender Lemonade

Impressive! I was thinking of running out to the store just to pick up some lemonade concentrate when I remembered that somebody here must know how to make this from scratch. I made the lemonade as written adding 6 frozen strawberries for color as another reviewer recommended. Flavor was good, but a little sweet. Next time I will add sugar slowly and taste as I go. If you are looking for a 'slushy' consistency, you should lower the water and add more ice cubes. My kids loved it!

Butter Chickpea Curry

Excellent! I have made a few tweaks based on the recomendations of other reviewers: coconut milk for cream, diced tomatoes for tomato soup, cauliflower for potatoes, added peas during the last few minutes for color. Chix is optional. A keeper!
