Beth's Spicy Oatmeal Raisin Cookies

Another wonderful cookie recipe, Beth! These are soooo addicting and loved by all. I halved the quantity of cloves since it's not my favorite spice and it was just right for my taste. I might experiment with allspice too. We all hope you're still experimenting and almost ready to share more of your great cookie recipes.

Creamy Peanut Butter Fudge

Excellent flavor and it IS creamy - wish it could be just a little more firm so it would be easier to cut even, clean pieces. Makes a lot!

Paul's Pumpkin Bars

Fabulous pumpkin bars - thanks Deb for posting the recipe. They were so good that I had to give some to two families. Otherwise, we would have eaten the entire pan. So nice to find such a yummy dessert that is so easy.

Baked Pork Chops I

Great recipe, Dawn! Our family loved it and it will become a standard. The chops I had weren't overly thick but I baked them for the times given and they were fork tender as other people described - not dry. The wine makes the difference I think (and perhaps the wash/coating) since I'm an old pork chop/mushroom soup user from way back.

Beth's Orange Cookies

A lovely delicate orange cookie. Don't leave off the frosting! I'm tempted to use part butter the next time I make them but I know Beth must experiment before finalizing her original recipes so I suspect she tried that. Next "Beth" cookie to try is peanut butter. Our favs are your chocolate chips and snickerdoodles.

Easy Apple Coffee Cake

Great-tasting "doctored" cake. I agree with another reviewer who said this would be good any time of the day. I added a teaspoon of vanilla to the batter. Glad you shared your recipe.

Apple Crumble Pie

While I love to bake, I've never mastered a good pie crust. I used a frozen deep-dish pie crust and suddenly my hubby thinks I can bake a pie. Thanks for this quick and easy - and let's not forget delicious - recipe. I piled Granny Smith's high and patted down the crumb crust to keep it in place. Final result was a beautiful, even pie. Next time I might add just a smidgen of cinnamon (1/8 tsp or less) to the crumb topping.

Caramel Filled Chocolate Cookies

Oh the agony of the first time you make these. They are great-tasting but too time-consuming. Thank heavens for the helpful hints by other reviewers. DON'T take the cookies off the cookie sheet in 1 min. per instructions. I left first batch on cookie sheet longer as someone suggested but it still wasn't long enough. The caramel leaked from the rack onto the counter. Let the cookies cool pretty well before transferring them. I also recommend you follow the reviewer's suggestion to work with only 4 at a time out of the fridge. I may experiment next time. Why couldn't you put the ball into a miniature muffin tin and just shove the Rolo on top and sprinkle with the sugar/nuts mixture?

Praline Sweet Potatoes

Added this to our Thanksgiving menu and it is a keeper. I used fresh mashed sweet potatoes and prepared all but the topping the night before. Although I allowed extra baking time, center was a little runny. Not sure if that was due to early preparation or watery potatoes to begin with. Will adjust a little next time and will definitely put them in a low-sided casserole rather than a high one.

Banana Pudding Cake

A very quick, easy and delicious cake that only gets more moist each day. The first time I usually try a recipe as stated and then adjust to my taste. But this time I also added 1/4 cup light brown sugar to the batter. The reasoning was based on another "doctored" banana cake that I make. The author said that adding a little sugar to a cake mix makes it more tender.

Beth's Chocolate Chip Cookies

Wow, Beth, just simply a delicious cookie! We loved Mrs. Sigg's Snickerdoodles that you shared so I'm so glad I searched for more of your recipes. In reading other reviews on this recipe, it seems that no matter what you do, they are still great. I thought I had everything but didn't realize that you called for sweetened butter so I used unsalted and substituted walnuts for pecans since that's what I had. My DH is taking the majority to our grandchildren and they will be happy campers tonight! It's wonderful to find a truly soft and chewy chocolate chip cookie. Thanks!

Bread Pudding II

We loved your recipe! A favorite resort restaurant we love is famous for their cinnamon bun bread pudding. After another reviewer said they tried a specialty bread, I made your recipe using Pepperidge Farms Cinnamon Swirl Bread. Since it is fairly thin, I added two slices. Came out great and my hubby was thrilled. Thanks for sharing.

Mrs. Sigg's Snickerdoodles

I rated this recipe 5 stars some time ago. If baked the proper time these cookies are just as Beth says - crispy edges with chewy centers. For those that say the cookies are hard, you are overbaking them! They look a little "under done" when you take them out. Try this excellent recipe again.
