Spinach Pancakes

I tried this recipe but changed it a bit by adding low-fat grated cheese and french fried onions(from a can)and some mango marinade (just about a tbls) and fried them in canola oil. They turned out so well that my husband wants them all the time now! Really delicious - goes with anything!

Healthier Banana Banana Bread

I made this recipe into muffins! A little on the dry side but tasty none the same. I added some choc. chips to the batter, a tsp. of vanilla and about a quarter cup of molasses. I also made a light glaze out of powdered sugar and milk to put over the top. I will make these again. Great for Breakfast with a little Greek yogurt, walnuts and honey.

Molasses Cookies

I just made these cookies last week. Still have 3 left! They are just the best molasses cookie I have ever had. I did change a couple of things - used 1/2c. butter and 1/4c marg.; half white and half brown sugar (as suggested) and cut the baking soda down to 1 tsp. and added 1 tsp. of vanilla and only baked for 7 minutes. The cookies turned out soft and chewy. Try it - you will love it!

Snickerdoodles I

These are the best snickerdoodles I have ever tasted! They are easy to prepare and disappear fast. I undercook them by a minute because I like them soft. Great for gift giving.

Potato Salmon Patties

Great recipe! I didn't have potato flakes so I grated half a small raw red potato and used it instead. When cakes were almost done I sprinkled a bit of pecorino romano cheese on top! YUM! My husband said these cakes were tastier than the salmon meals we get out (and he's picky!) Enjoy!

Skillet Chops with Mushroom Gravy

This was a good recipe but my chops weren't tender enough - might have over-cooked themb the the gravy was fabulous from the pan drippings. Very tasty!!

Lori's Famous Crab Cakes

I took a few ingredients such as: green peppers,parsley,hot sauce, and some of the other seasonings from this recipe and added them to the "My Crab Cakes" recipe when I made them. I do this a lot with recipes and have always been happy with the results.

My Crab Cakes

I made these crab cakes with the variation of using dry stuffing mix as a binder. Also, I chilled the mixture before I dipped them in the bread crumbs. They held together fairly well by doing this. I made a honey mustard sauce for dipping. Yum Yum. My fussy husband loved them.

Banana Sour Cream Bread

Loved this "bread". My husband raved. Really more like a cake though. Very sweet and moist. I will decrease the sugar to 2 1/2 cups instead of 3 next time I make it will be soon!!!! Great gift when made into small loaves.

Baked Salmon II

I combined this recipe with the Cocanut/Bread Crumb baked Salmon and it was especially delicious. I served it with spinach,(cooked in skillet with a tablespoon of olive oil and 2 minced garlic cloves with salt and pepper to taste), as my veggie and served it up with long-grain rice. Great Meal!!!
