Hello Everryone I'm back. Doctors have been keeping me busy.

Hello everyone good to be back.  I would take my PC Tablet to the hospital, but the hospital's WI-FI connection gives new meaning to the word Slowwwwwwwwwww.  Snail mode....LOL
Anyhow my A1C has went from 6.8 down to 6.2 what ever that means.  Doctor says that's good, and that's good enough for me.  I don't let a whole lot bother me in life, we have way to much of that already.
Well I drove the nurses nuts talking about the things I've done cooking.  I love it.  They threatened me yesterday, they said I better have some sample's with me when I come back Oct. 3rd..  Life's good. 
OMG  the sugar free peach preserves I made two weeks ago is already gone.  My kids!!! 
My son Kyle has my wife and I coming over Sunday for dinner and we're having (Chicken breasts stuffed with a spinach/ricotta/mozzarella mixture, then baked in your favorite marinara sauce.  Well, so much for the diet.  I have a sugar free strawberry pie in my recipe box if you want to look at it.  You all know how to navigate in here and I try to make everything visible to the public.  I'm taking this to Kyle's Sunday... I know him and Lisa will enjoy it.  Very refreshing. 
Anyhow I just wanted you all to know I'm back.

Hgb A1C tracks your blood sugar trends for the last several months unlike the daily finger stick which just tells you what it is at the moment. These readings mean that your blood sugar is less than it was and you are in better control. Knowledge is power, read and learn all you can about diabetes. The chicken dish sounds pretty healthy to me unless it is fried. Enjoy your time with your family.

Knowing you are on the right track should make you feel good! You go right ahead and enjoy that chicken dinner, it does sound healthy and tasty.

I would say "pass the peach preserves" but sounds like somebody took care of that already! Glad to see you back.

Glad to be back. Now I have yellow and acorn squash by the billions. I don't use the oven in the summer time cause it heats up the house to much. I do grill a lot of squash. My favorite is fried, but all of you know I can't have it fried any more. So now I'm trying to find things to do with it without turning the house into a inferno. But other than that Thank you all for thinking about me.

I love yellow squash sauteed with onions, peppers, mushrooms, fresh herbs and maybe a dash of balsamic vinegar. Or oven fried would be a lot healthier. Enjoy!

I was at a local farm supply and asked some ladies in the canning isle if yellow and acorn squash could be canned, to my surprise it can be. I thought it would turn to mush. My neighbor has 191 tomato plants so I know if nothing else this winter if we're snowed in, the wife and I can live off of tomato's, squash, and my lovely peaches. I'll bake my own bread.

About Me
I am a easy going guy who is always busy. Yes ladys and gents I don't have time for TV. During the winter months I am either hunting or most likely helping down at the church. During spring I am working on repairs outside and getting my hotbox ready for the garden. Summer and fall I am busy canning and freezing what comes out of my garden. I also cook all the meals for the day or event.
My favorite things to cook
I have to thank my mother for this. She broke her ankle when I was 10 years old, and there is where I learned to cook. I am nothing compared to my mother,(she is a true Chef), can make a delicous dish from scraps in the refigerator. Anyhow, I make a lot of bread type, deserts, nationalities.
My favorite family cooking traditions
You most likely won't like this. As a youngster we used to have family reunions and get togethers all the time. We would all go fishing and have a fish fry, and the ladys would bring side dishes and of corse desserts. That has gone now because America is to busy.
My cooking triumphs
Everything I have ever done has been great. I always end up with a empty dish.
My cooking tragedies
None: My daughter burnt popcorn;;; how do you burn popcorn? She said I did it, thats my girl.
