Aunt Anne's Sesame Cookies

This recipe is AWESOME! I didn't have anise extract so I used Vanilla and it was great. I didn't did them in milk either. I rolled them into balls and then rolled them in the sesame seeds. They came out evenly coated and baked into a nice round cookie. My daughter loves them plain as well (with no sesame seeds). It's a great cookie. Next time I may try lemon extract or almond extract. I made some with roasted sesame seeds and some with unroasted sesame seeds. Both are wonderful.

Raspberry and Almond Shortbread Thumbprints

These cookies are so easy and so yummy, I think it's impossible to screw them up. Everytime I make them, they don't last more than a day. I increase the almond extract to a full teaspoon and I add about 1/4 cup nuts (chopped small) to the dough after it's all mixed. I've used a variety of jams and they all taste great.

Cranberry Pistachio Biscotti

These are awesome! I increased the amount of extract and the amount of chopped nuts so it has a stronger flavor. I also use whatever nuts I have on hand. I've always got almonds in there too. The dough is sticky but using wet hands helps a lot. It's also easier to cut them after they've cooled a little but not entirely.

Banana Crumb Muffins

These were very good muffins. I had to adjust the recipe because I only had 2 bananas so I ran into a couple roadblocks but they turned out great. For 2 bananas it said to use 3/4 of an egg.... not happening, I used the whole egg and I didn't scramble it. I also thought I'd add some vanilla and chocolate chips - yum on both counts. The crumb topping was good but a little too sugary for me. Everyone else loved it. Great recipe.

Sorta Salisbury Steak

OK, so here's the deal. I had all of the ingredients except the beef broth. So I improvised. I used 1 cup water, 1 cup white wine and 3 beef bouillon cubes (the little ones). I did season each piece of meat as I was frying it with garlic salt and McCormick Season All. All I can say is "Oh My God!!!" My husband had 3 1/2 pieces. It came out really good. I also did NOT make the gravy since the wine was going to add flavor to it. Totally YUMMY! With my changes it's a definite 5 star meal. Oh, and I only baked it for 1 1/2 hrs. We were hungry. Still very tender and moist. No need for 2 hours especially if you cook it covered.

Honey Crystal Almonds

These taste great! I did use almost 4 cups of almonds because there was a lot of honey. You really need to work fast with this recipe. When I first did it, the honey dried on the nuts before I had a chance to coat them because I had so much to do. Now I just cut the recipe in half so the honey doesn't dry before I have a chance to coat them all with sugar. The Parchment paper and ziploc bag idea work GREAT!

Fiesta Fry Pan Dinner

Wow! This was great. I used brown rice (cooked it first) and NO zucchini because we didn't have any. I used about 1/2 cup water once I combined it all. It was awesome. Next time I'm going to add some beans. The kids went wild. Kinda tastes like chili. Oh, and I just used diced tomatoes and it was perfectly fine.

Bou's Chicken

This was AWESOME!!! I even shared it with my neighbor. I thought it was going to be sweet but it wasn't. Next time I'm adding an onion and some garlic. (It's the Italian in me - gotta have garlic). I use boneless breast cut into pieces and it turned out fabulous. Why fuss with bones? I also served it over brown rice and poured the extra sauce over it all. FANTASTIC!!!

Chicken Puffs

These were great! I took other people's advice and did NOT use the butter but DID use Cheddar Cheese. I used a little oil to cook the chicken in the pan too. Also, I only needed 2 cans of the Pillsbury Croisant Rolls. We like more stuffing than dough and it worked great. Any less stuffing and you really get the flavor of the stuffing... it would have been all dough. Oh, I also added some of McCormick's Season All for spice. It's a bland spice but adds flavor. I'm definitely making these again but next time, I'm going to throw a little Salsa to the mixture. I bed it'll be awesome! In total, this recipe made 8 puffs for me. Again, 2 8oz cans was more than enough unless you like it doughy. Lastly, I brushed egg white on top so it came out golden brown.

Zucchini-Chocolate Chip Muffins

I did follow some of the ideas other people had mentioned and combined it all into one. I used a 1/2c wheat flour, 1/4c oil, 1/4c apple sauce, a little less sugar than called for and 2 tablespoons cinnamon. AWESOME! Next time, I'm using 1/2c sugar. I also used regular size chocolate chips - about 1/2c. RAVE REVIEWS!

Broccoflower® Risotto with Wild Mushrooms

This was GREAT! I did make some changed. I boiled the rice in a different pan and I used 2 1/3 c chicken broth and 1 c water. I also sauteed chicken, onions and garlic and added it to the dish. I sauteed the veggies last minute then mixed it all together. WOW! The hubby loved it.

Penne and Vodka Sauce

AWESOME! I did make a few changes. For 8 people, I made it 1 cup Vodka and 4 cups sauce and only 1 1/2 lbs pasta. That made just enough sauce for the pasta I made. Next time, I'll double the sauce so there's extra to spoon on top. Oh, and I didn't add the cheese. I just sprinkled it on top of everyone's plate. DELISCIOSO!

Jasmine's Brussels Sprouts

Wonderful! Next time I'm adding onions too. DELICIOUS! Oh and I used fresh proscuitto from the deli cut in 1/4 inch slices and diced it myself. Much more flavor and a lot less fat than pancetta. GREAT RECIPE

Pumpkin Cake

WOW! I thought the cloves might be overpowering but no way. This cake was AWESOME! I used 2 teaspoons of Allspice since I didn't have nutmeg. Worked great!

Baked Chicken and Onions

Chocolate Chocolate Chip Cookies I
