Pumpkin Spice Cupcakes

I made the mistake of not reading the reviews before trying this recipe. It seems like everyone said, "These are so good, BUT I made changes." I followed the recipe and did not make any changes. The result: a mild tasting cupcake. I thought 1 cup of pumpkin was too little, and I was right because the pumpkin flavor does not stand out, nor is it spicy enough for my tastes. So it was OK, but don't give 5 stars to a recipe that you had to "fix" in order to make better.

The Best Meatloaf I've Ever Made

This really is the best meatloaf recipe out there that I have found so far. I added some different seasonings and finely grated some carrots to the mix for a little extra nutrition (neither my husband or son noticed). Son shoveled it down so fast you'd think he was starving. I will add this recipe to my regular dinner recipe rotation.

Fresh Southern Peach Cobbler

Absolutely delicious. I used more than 8 peaches and it still turned out excellent. I loved how the crust was crunchy but also still fluffy and somewhat cake like. Will definitely make again!

Banana Sour Cream Bread

I thought my Mom's banana nut bread was the best until I tried this. This is banana-nut-bread HEAVEN!!! I added some nutmeg and ginger for a little more kick, and I thoroughly enjoyed every last muffin

Beth's Spicy Oatmeal Raisin Cookies

One word: ADDICTIVE! I love oatmeal raisin cookies and I was very pleased how these came out. I baked them for some friends who came over and they were gone within a few hours. Very good indeed! Will definitely make again.

Cranberry Orange Loaf

Something went horribly wrong when I tried to make this recipe. I can't give the recipe a low score because its very possible that I forgot something. My loaf didn't rise... HOWEVER, if you enjoy chewy thick-brownie-like texture then it did turn out ok. I liked the flavor, but it just didn't rise.

Cranberry Pumpkin Muffins

Very yummy! I added chopped pecans in addition to cranberries. I also used dried cranberries because that is what was available in stores--tasted yummy. They were a little sweet, so next time I will add less sugar, or perhaps some orange zest. I sprinkled them with powdered sugar after they cooled. They quickly disappeared when I brought them to work. Would make again.

Chocolate Covered Cherries

These took a while to make, but they were the best darn chocolate covered cherries I've ever had! I gave them away as part of a christmas cookie plate and they were the first to go. Grandpa got his own plate of just cherries (his favorite) and they were gone in about 2 hours!!!

Potato Squash Cakes

I used frozen hash browns from the grocery store because that's what was on hand. Instead of flour I used pancake mix-- tasted great. Very easy and good taste.

Broccoli-Stuffed Chicken

I got these really thick breasts that I butterflied and then flattened. Unfortunately I did it a little too thin so the chicken tore a little when I put the toothpicks in and the cheese and broccoli mixture melted out during baking-- BUT it was sooo tasty! Instead of using chicken broth I used cream of broccoli soup. It was really rich and my boyfriend liked it. I served mine with mashed potatoes. They are even better reheated! The curry flavor makes a great twist.

Pepper Crusted Tenderloin of Beef

By boyrfriend and I both enjoyed the tenderloin and I have requests to make it again! It was a bit peppery, but that is an easy adjustment to make. Great flavor, tender mean, excellent recipe.

Fresh Pineapple Upside Down Cake

Excellent cake! It came out moist, spongy, and heavy. This cake was very filling and the flavor is very unique-- I felt that it tasted similar to cheese cake with a pineapple zest but with a pound cake texture. Sounds weird, but the cake turned out excellent!

Nutty Apple Crisp

Better than apple pie by far! I shared this recipe with a friend and it is a hit with her too! I used green and red apples and the tartness and sweetness was a great compliment, especially with the spices and oats.

Glazed Meatloaf II
