Slow Cooker Casserole

Probably not a fair review because I left out the ramen noodles and ramen seasoning altogether, but it was DELICIOUS! Tasted like chicken a la king. Served it over hot biscuits. I didn't add any additional salt - and my salt-loving husband didn't use the shaker at the table. We both loved it! This is a keeper.

Shrimp Fried Rice I

Too much rice - I didn't use it all. Used regular sized shrimp ("large"). Added minced garlic to onion and celery. Like others, I added extra sesame oil, soy sauce, and black pepper. Very good, though! My husband loved it too (and he's not much of a rice eater.) Will make again!!

Maria's Stuffed Chicken Breasts

Like so many others, I, too, tweaked this recipe a bit. I think it's a great basic recipe, but it looked like it needed more flavor. I added Italian seasoning to the spinach mix before rolling it up in the chicken. After rolling it up, I sprinkled the chicken with Italian bread crumbs. Since I don't especially care for red sauce, I used a jar of alfredo sauce instead, then topped that with the mozzarella cheese - along with some shredded parmesan cheese. Yummy. Served it over angel hair pasta and it was delicious! Like everyone else, I had leftover stuffing. Froze it for future use.

Chocolate Toffee Crunch Bars

This is SO delicious and simple to make. Like many others, I used 1/2 cup butter with the graham cracker crumbs (to make the crumbs stay together) - and doubled the toffee filling. I've made three pans of this and each one came out perfectly, following the cooking directions as written. Wonderful gift to put in a Christmas tin (if they last that long!). This is a keeper!

Angel Shrimp Pasta

The most delicious shrimp pasta recipe I've ever made! Perfect amount of "kick" and flavor. I added a chopped bell pepper. We practically licked the pan!

Burrito Pie

Actually - with a few of the tweaks that other reviewers offered - this is a 10 star. I, too, spread the beans on the tortillas and put the beef on top of it. I seasoned the beef with chili powder and cumin. I left out the green chilis, and instead used jalapenos. Skipped the taco sauce altogether. Used two tortillas in each layer. Topped with salsa, sour cream, and some shredded lettuce and tomatoes. My crowd LOVED it. So good - a DEFINITE keeper. Makes a ton, too.

Creamy Cajun Shrimp Pasta

Very good! I lightened it a bit by using skim milk, and a combination of Smart Balance spread and margarine (instead of the butter). It didn't compromise the recipe at all. I used Tony's Chachere as the cajun seasoning and omitted the salt. I think the lemon juice is key. My son was home from college and LOVED it. I'll definitely make this again!!!!

Cranberry Sauce I

Pumpkin Bread IV

Yummy recipe - but unfortunately I did not follow the advice of so many others and add anything. This would have been awesome with raisins or chocolate chips. Also - it made 4 loafs for me. Next Thanksgiving, I will do it again and try raisins in one, chocolate chips in one, nuts in one, and the other I'll leave plain. This is moist and yummy!!! A definite keeper!!!

My Favorite Soup

Excellent. Down in South Louisiana, we refer to this as Cream of Corn & Shrimp Soup. Perfect, easy, yummy soup. I added some red pepper (about 2 tsp.) and some black pepper. Definitely doesn't need any salt, as the potato soup, etc. added more than enough. I will make again and again, and will especially remember this to impress company with!

Mexican Casserole

I made this for company and was disappointed. While the flavor was good (though I did have to add some jalapenos and onions) - the texture was all wrong. It didn't have a "casserole" consistency. My friends said they liked the taste, but agreed the consistency was the problem. I made a chicken taco salad with the leftovers. It was actually very good that way!

Sour Cream Marinated Chicken II

A++ I used boneless, skinless chicken breasts, and substituted a little creole seasoning (that we ALL love here in south Louisiana) for the salt, pepper, and celery salt. I served it for company and they loved it! A definite keeper!
